DESSERT ALERT! I just made this and it’s literally so good it should be illegal. Saw an unhealthier version of this on pinterest but I fitblr’d the shit out of it.

Slice banana down the middle

Put it in a little foil boat

Top with nut butter (I used almond), chopped walnuts, a few chocolate chips, cinnamon

Bake/broil till the chips/nut butter begin to melt

Serve with greek yogurt mixed with some cinnamon

INHALE IN 2 SECONDS

Day 14

OMG I made two weeks ! That might not seem like a big deal but it is.  Still having a hard time eating all the lbs of raw and cooked vegetables with the four fruit.  BUT am slowly finding new ways to add to my meals.  Yesterday I added shredded apples, beets and carrots to a salad with balsamic vinegar and honey mustard dressing.  I could of eaten a vat of that stuff.

I think in order to succeed you have to really look around to find interesting ways to prepare food.  With today's resources it is a lot easier.  Keep on surfing.  I also have a lifetime of collected cookbooks which I am finally dusting off and reading.  Great resources !  The beet, carrot and apple salad came from a old cookbook that was my mom's

So what have I learned in two weeks?  I am totally surprised how much better I feel with no sugar and dairy.  For the first time in years I am sleeping 6-8 hours a night and waking up feeling really good.  I have lost weight but not sure how much because I am not weighing myself because it makes me crazy.  I am using the JEANS test!!!!!! Every woman alive knows when they gain or lose weight by their jeans!!!! The  JEANS SHRANK IN THE DRYER is just one of the lies we tell ourselves!  You spend a lot more time in the produce section.  It is funny because there is so much stuff there that I don't have a clue about!  I am trying once a week to pick something and cook with it. This week it was whole beets.  Have had beets but always canned. Cooked beets are wonderful and totally a great addition to my treasure chest!   TWO things I couldn't live without my vita-mixer and electric  vegetable steamer.

Day 10

Hard to believe I made the 1 week mark and am on to week two.  Trying to read everything I can  to find creative ways to EAT TO LIVE requirements.  The thing that keeps me going is how much better I feel.  I still find it hard to eat a lb of raw and cooked vegetables.  

Found a good web site  http://fatfreevegan.com  Has good ideas on many different things such as dressings.

I have tried every diet and have had moderate success but I hate counting and doing all lowfat stuff full of who knows what.   This life change seems so much healthier.

Today it is 60 degrees out and all the snow has melted! But I am sure winter is still out there waiting to kick our asses!

Day 6

Eating a pound of cooked and  of raw vegetables is HARD!!!!!!!  But I am sticking to it.  Went to William- Sonoma for a cooking demo and got some good ideas.  They have free classes on Sunday mornings and Monday nights.  

Instead of salt use lemon and honey to add flavor. Salsa can be used on veggies.

I took a jar of salsa added honey, lemon and ground pepper and ran it through my vita-mixer.  Great topper for cooked veggies.  Hate eating them plain! Can't wait to use this on a baked potato.

Also a tip about smoothies! Make  them the night before and put in a cup with lid.  It is great to get up in the morning and have your breakfast ready!

Day 4 Update

Well now....being so proud of my new smoothie I decided to make one for my significant other.  Put in all the ingredients and pushed the on button.  The machine was so loud!  Jerry said "What are you grinding up rocks?"  No not rocks just my plastic cap stopper!  

I can now attest to the fact that a vita-mixer is really powerful!  Called the nice folks at vita-mixer and they are sending me a new cap. Found out that you should buy your parts directly from them  to be sure you have the right one.

Day 4

Ok I know I am only on day 4 but usually by now I quit all changes and go bad to my old unhealthy ways.  But  LTE seems to be working and is not as hard to follow once you hit the produce aisle.  My fridge is packed for the first time with healthy choices. Ok... everyone including my son goes on and on and on and on  and on about smoothies!  So today  was the day to really prove that SMOOTHIES suck!  Just didn't think I would like them.  But using my vita-mixer I made one with 1 orange skin off, hand full of grapes and a banana plus a little water and cinnamon. SURPRISE this took a minute to make and was really GOOD!   I will try other smoothie recipes I found on Tumblr.  

The other thing I noticed is that I am feeling and sleeping better.  Hardest thing so far is giving up multiple cups of coffee!!!!!  God I love my coffee!

A New Year

Read the book by Dr. Furhman's   EAT TO LIVE  and have started this new year to try and follow it for at least 6 weeks.  So I have been searching the web and Tumblr for recipes and information.  It surprised me how many people are foodies out there! Great resources to use.   So I will be sharing my finds and recipes borrowed and made up.

Day 2 The first thing that I have learned at this ripe old age of 60+ is that protein can be had by not eating meat or dairy!  Vegetables and beans have protein.  I love a good steak but with it comes the fat!  If you want a great book on foods George Mateljan's THE WORLD'S HEALTHIEST FOODS  is the place to start.  Great information. His web site has great info.

Recipe- Parsnips, Carrots, Green Beans & Red Bell Peppers (made up)

Peel carrots and parsnips and cut in to match sticks size.  I used 3 of each

1 Red pepper sliced into strips

2 Cups of fresh green beans trimmed

Slice  half and onion into bites size pieces

I also used sliced fresh mushrooms

2 cloves of garlic

Blanch green beans & parsnips about 5 minutes in boiling water

In a wok or pan with 2 tbs of olive oil saute garlic, onions,mushrooms & red bell pepper

Add blanched vegetables, mix and cover on low heat for about 5 minutes

Results

This is a recipe I will actually make again!  Not only is it pretty but it is really tasty.  Nice combination of flavors.  The parsnips add a sweet flavor if you are missing sugar!

3 mashed bananas 2.5 c flour 0.5 c sugar 0.5 c brown sugar 3.5 tsp baking powder 0.5 tsp salt 1 egg 1 cup walnuts 2 TBS oil Bake 350° for 55-60 minutes
