Barista has become a trendy job that requires technique, precision, organisation, creativity and probably a long beard. London famous coffee roasters give courses from beginner to super advanced, and the best baristas compete in world championships. You can see tons of tutorials on Youtube and Instagram is full of coffee shots. ah ah . As coffee culture changes , baristas spread around the world, and France is slowly adopting Lattes and flatwhites. My boyfriend trained at Prufrock London and worked in several coffeeshop of East London, but has now moved back to France to share his Baristas knowledge with the people of Toulouse who seem thrilled, although most customers are actually foreigners. Are we, smelly french, ready for the big coffee revolution? I would say Y.E.S , we are simply a bit late and skeptical but we won't resist for too long. Then , there is a place and a moment for good coffee - art. My brother was telling me that Baristas are starting to spread in Paris train stations. In a rush, he ordered a coffee before catching the train but the guy took ages to draw a heart with a stick. My brother nearly missed the train AND his mates took the piss at his gay coffee 'some sort of declaration?' Anyway, it might take a bit of time before French get into it...
The baristas I met are passionate (even too passionate :)) and know everything about coffee and milk: temperature, textures, flavours, time, dosage etc... They are just happy to make the best coffee for you and see you smile. So smile :)
