How can you tell God that you are ready for a relationship when you can't even invest in your relationship with Him?
I can't wait to try this over Christmas break, when I'm home (sans almonds)! Maybe I'll even do it when I'm in the States for mah gurrrl's wedding in 2 WEEKS! You hear that, Jayne? =)

Mudslide and Brownie Trifles
Serves 7-8 (in 6.5oz glasses)
Chocolate Pudding with Kahlua Layer
1/3 cup cornstarch
1/2 cup granulated sugar
Pinch of salt
3 cups cold whole milk
3/4 cups dark chocolate, chopped
1/2 cup plus 4 tablespoon of Kahlua
1 tablespoon vanilla extract
Instructions:
1. Combine cornstarch, sugar, salt and milk in a blender or food processor and pulse until well blended. Alternatively, combine all ingredients in a bowl and whisk vigorously. Transfer mixture to a heat proof bowl and place over (not on) simmering water for approximately 15-20 minutes, stirring occasionally. Pudding is ready when mixture coats the back of the spoon. Add Kahlua and stir to combine. Add vanilla and stir to combine.
Vanilla Pudding with Bailey’s Irish Cream Layer
1/3 cup plus 1 tablespoon cornstarch
1/2 cup granulated sugar

1/2 cup plus 4 tablespoons of Bailey’s Irish Cream
2 tablespoon vanilla extract
Instructions:

Brownie and Almond Layer
1 1/2 cup of crushed brownie crumb
3/4 cup of finely chopped almonds
Assembly:
Fill pastry bags with each flavor of pudding.
Pipe a chocolate layer onto bottom of glass.
Sprinkle crushed brownie and finely chopped roasted almonds on top of chocolate layer.
Pipe vanilla pudding on top of brownie and almond layer.
Continue layering by repeating steps 2-4.

Being away in Europe when all my family and friends are home in Texas/throughout the US can definitely be tough. Just when the distance was starting to get tough, God chooses to show me how much He loves me and how much I am loved in 3 very tangible ways:
1. I spent yesterday with a new friend, Annemarie, in beautiful Vienna! We found out recently that we have a mutual friend who lives in Vienna with his family so we got to have a real family dinner in a HOME....I know that I live in a great community, but it's great to be around grandparents, parents, babies all at once. Not only that, but they are also super holy and Catholic and FILIPINO. Felt like home again.
2. My amazing mama sacrificed a alot to send me 2 packages last week and they finally came in. When I opened them this morning is was totally Christmas morning-like. I am loved.
3. I just read this amazing article, which I linked to above. It was exactly what I needed to hear at this point in my life. Of course sacrifice and prayer are the realest forms of love we can give to someone at any point in life, all the more it is necessary while seperated by distance. Skype, Facebook, email, and post are great, but they can only compliment/enhance true Christ-like love, not prove a basis or foundation for it.

St. Thérèse, privileged Little Flower of Jesus and Mary, I approach you with childlike confidence and deep humility. I lay before you my desires, and beg that through your intercession they may be realized. Did you not promise to spend your heaven doing good upon earth? Grant me according to this promise the favors I am asking from you.
Intercede for us all the days of our life, but specially during this Novena and obtain for us from God the graces and favors we ask through your intercession. Amen.

On October 1, many Christians will be united spiritually through the devotion of one special young woman. St. Therese of Lisieux (1873-1897), or St. Therese of the Child Jesus and Holy Face, or simply "the Little Flower". St. Therese was only 24-years-old when she died, but has been called "the greatest saint of modern times" (Pope Pius X) and has been declared a doctor of the Church. Such an honor is given rarely, only after canonization, and has only been given to some 33 saints, only 3 of them being women.
Some may ask what this young lady (I am only a few months way from being 24, myself) did to merit such a distinguished honor! Her spirituality and way of life focused on a few very simple ideas. That is, simple in thought, but extremely difficult to live out. She saw herself as God's child, very weak and humble in our lowly humanity, yet confident in God's loving mercy and plan for our lives. She aimed to live out this plan through immense love for our brothers and sisters on earth, through aiming to be totally united and in love with the Holy Trinity. Entering Carmel at the very early age of 15, St. Therese sought to achieve holiness through a simple "Little Way" calling Jesus' arms "an elevator that would raise" her up to Him.
Sainthood is attainable for all of us and St. Therese shows us that Christ longs live intimately within each of our hearts, no matter what our spiritual background is! Let St. Therese lead you to the Child Jesus and the Holy Face through her loving example of the Little Way. Join me in prayer for nine days starting tomorrow, Thursday, September 22 and ending on September 30, just in time for her feast day on the 1st of October. Here is a version of the novena. God bless and may the Joy of Christ fill you heart.

This is how I've been feeling lately...it must be because I live with so many pregnant people. I think I'm nesting for all of their kids!
