SNOW DAY!! Got snowed in today from work with Sam and the hubby, so what's for lunch? How about a bowl of rice with chinese sausage--the way mom and grandmoms all over Asia make it during the winter!?!?! This dish is not only delicious, it also show the intelligence of Chinese grannies who utilize leftover ingredients to make something that's amazing, warms you up, and inexpensive to make. Every time I eat this it brings back a piece of childhood <3
SNOW!! ok i'm ready to go back indoors now for some rice!
Leftover rice (if you don't have leftovers, just make a quick pot)
Chinese sausages (2-3 links)
Soy sauce, sesame oil, sugar, fish sauce for condiments
This is what you do...because i had leftover rice the whole process took about 30 mins
Put leftover rice into rice cooker, chop up the chinese sausage and sprinkle on top of the rice
Pour a shot glass of water over the rice (this is to keep the old rice moist during the re-cooking process)
Turn on the rice cooker-- if your rice cooker have a "quick cook" or "re-heat" option just use that. Otherwise just use the lowest setting allowed (since you're not REALLY cooking it and just using the rice cooker to reheat)
About 1/2 way through cooking (my rice cooker has a timer that tells me this, sorry i'm fancy with my carbs), open it up and stir around the rice. Then pour in all the condiments
I did not measure anything but this is my best estimate for 5 cups of rice- 5 tbspn soy sauce, 2 tbspn sesame oil, 2 tbspn sugar, and 2 tbspn of fishsauce
Mix the rice again, and shut rice cooker
Meanwhile, scramble up 2 eggs and pan fry it into an omlette. Let cool slightly, then cut up into small tiny pieces (i fold the omlette into a 1/2 circle, cut up into thin strips, then cut each strip into 5 little sections)
Dump the egg into the rice cooker, mix again
Cut up scallions--if you like scallions, cut 2-3 stalks. Also, cutting it diagonally brings out more flavor and texture too! Dump scallion into rice cooker, mix again
And then you let it sit for 10-15 minutes-- this is to allow all the flavor to soak into the rice :) :) :)
Then...EAT!! if it's not salty enough just add more soy sauce, i found fish sauce to be a good alternative too if you don't want it to be TOO salty...ENJOY!!!
