Ingredients: - 3 Chicken breast - 2 Large Eggs - Milk - Butter - Wholemeal Flour - 2 Slices of Wholemeal Bread - 1 Large Red Onion - Garlic or Garlic Paste - Coriander - 2 Large Carrots - Salt - Fresh Ground Black Pepper
Steps: - Mince the chicken breasts and onions into a large bowl. - Grate the carrots and garlic into the bowl with the mince. - Break the bread into thumb size pieces and soak it in about 30-50ml of milk in a separate bowl. Let it sit while you continue to marinate your mince. - Into the bowl with the mince add eggs, roughly chopped coriander (to give more fresh and mouth watering flavour). Season it well with salt and pepper, get in with your hands or big spoon and mix it well! - By now your bread should be soaked well, so gently squeeze out the excess milk. Add it into the mince. Wash your hands, get in there to mix it well and start making small patties with your hands! - Roll the patties in flour, heat up large skillet pan on medium fire. Once the pan is hot, add some butter and start squeezing in the patties into the pan. Fry for about 5 minutes until nice and golden on each side. - Add about 50ml of water, season it a bit more with salt, you can even add some tomato sauce to make gravy for rice or noodles that will go with the cutlets.
Tips: - Adding a bread soaked in milk to the mince, first of all make the mince less rubbery, dry and dense. But more softer, airy with just the right amount of moisture. However if you want to keep it extra healthy, instead of adding bread, separate the egg white from the yolk. Beat it with an electric mixer until its white and frothy. Finally add milk, yolk and egg white into the mince and mix it together. - I also love using butter rather than olive or sunflower oil. As it gives more moisture and doesn’t burn as fast as using liquid oil.
