Italian Style Tomato Sauce
I got this recipe from the Ball Complete Book of Home Preserving book. It’s one of our favorite sauce recipes, and well worth the effort! I only made minimal changes.
2 finely chopped celery ribs
4 cloves garlic, finely chopped
4 TBS bottled lemon juice
½ tsp freshly ground black pepper
Prepare canner, jars and lids.
Blanch, peel, core, seed and chop tomatoes. Place in a colander and let stand for 15 min. Discard liquid and puree tomatoes in a food processor.
In a large stainless steel saucepan, combine 1 cup of the tomato puree you just made, onion, celery, carrot and garlic. Bring to a boil stirring frequently. Reduce heat, cover and simmer until vegetables are tender, about 5 min.
Add the rest of the puree one cup at a time.
Stir in lemon juice, salt, pepper and crushed red pepper.
Bring to a rolling boil for about 15 min stirring frequently.
Ladle hot sauce into hot jars, leaving ½ in head space. Remove bubbles and adjust head space. Wipe rims with white vinegar and close to finger tip tight.
Water bath can for 35 min. This makes about 3 pint jars.
