Personally I tend to go for either 2 or 3, depending on what works best for you visually.

A tip for those struggling with those spikes (or game characters from specific angles in general): Go to Sketchfab, look up said character and rotate the 3D model in any angle to your desire. It’s been an absolute lifesaver in getting these hedgies’ quills right and now having done it often enough, I can even easily do it without reference ^^
