Recently, I met a friend out for lunch. The cafe we had intended to go to was closed, so we walked two doors down to one that had nice outdoor seating. I am not even going to even go into the confused concept of this cafe because it’s beyond baffling. Suffice to say, the menu had a decent description of Dolma, stuffed grape leaves, that led me to be curious and order them. There are two things I never order out at a restaurant: Baklava and Dolma. Here, I felt compelled to order both and it made me pretty darn grumpy that cafes still insist on selling cheap, junk food at high prices.
Before ordering the Dolma, I read the reviews on the restaurant, specifically on the dolma. They were raving about them. “Let’s try them!” I suggested. When they came, I immediately knew that they were canned because they were rectangular due to being packed so tightly together. They were disgusting: soggy and tasted of vinegar.
I made up my own batch of dolma, just so that I could deconstruct both and show you what REAL dolma should look like. Home made dolma is filled with cinnamin, spices, dill, mint, pine nuts, and currants. They are varigated in size and are cylindrical. If you see dolma that is a soggy white mass of over-cooked rice, run away..run far far away!
Deviating from my normal baklava blogs, I felt compelled to demand decent Middle Eastern food from these cafes! There are big distributors who send these cafes everything pre-made and packaged for the gyros, baklava, etc. All the cafes have to do is heat it up. Demand real food, dammit! These new Middle Eastern cafes are dumbing down the food to feed mainstream. This is not what that culture tastes like.
You should taste the dance of spices mingling in all corners of your mouth. Extremes of spicey hot to oozing sweetness should permeate the experience. There should be a sense of time and family in each bite. Middle Eastern food takes time, hours of simmering deepen the flavor. It takes a family gathering together, talking or drinking tea while they make the meatballs or roll dolma.
I am not going to even mention the baklava I attempted to eat. I understand now how come some people are afraid of trying my baklava. They have had such horrible baklava that they are scarred for life.
If you take a look at the photos below, you can immediately see the difference between the fresh vs. canned. Save your tastebuds and your wallet by not ordering canned dolma out. Just ask if it’s home made or not if it’s on the menu. If it’s not, stay away!

Oh my YUM! Simple can sometimes be the most divine. I had leftover walnut and milk chocolate filling that needed to be used up.How could I make it Sassy? Bananas, sliced and sprinkled with cinnamin and sugar would work perfectly! The bananas slightly caramelized with the sugar and seemed to melt into baklava for a soft, unexpected sweetness. Summertime is synonymous with lemonade stands. It was no different in our house. The girls had asked one day if they could do a lemonade stand (last minute, on a Wednesday at 5 pm..with no supplies). I said that I would help them, but only if we planned it from a business point of view. That meant planning, location, supplies, a cash drawer, etc. If they were serious, I was there to offer support…and baklava.
After much discussion, we realized that our house did not provide enough exposure for their business. A pop up Lemonade stand at the empty Starbucks on 15&15th in sugarhouse would be perfect on a Saturday! Location: Check!
Next, the girls wanted baklava, Lemon cookies, and Del’s lemonade. Plan: Check!
A trip to the dollar store provided all our supplies. We saved the receipts because we were going to do a profit/loss sheet at the end of the day. Their color scheme was blue, yellow and green. Cups, napkins, and a nice dispenser would put the stand together and make it stand out on the corner. Supplies: Check!
I told them that they needed to start with a cash drawer so that they could easily provide change for their customers. The littlest counted the coins and wrote them down, while the older one recorded the cash. They asked how come we needed to count the drawer ahead of time. I told them that they needed to know what they began with in order to know what they made at the end of the day. We would later count the drawer and subtract the opening amount.
In 2 hours, they sold about $87.00 in lemonade and food. Not bad! Next, they subtracted their cost for supplies ($30) and divided the remaining $57.00 between the 2 of them. By the end of our profit and loss math, they both looked at me and said: “UFF! Having a lemonade stand takes a lot of time and money to start!! When can we do it again?!!”
Our intention is to have a pop up food and beverage stand each month, but next time they want to do tattoos. It would be great to have a little kids market for all the neighborhood kids to try their hand at Entrepreneurship! Boozy Baklava had a blast at Granary Row! Bohemian Baklava had the prime spot in the Biergarten with 2 different beer baklavas as well as some savory baklava (called Börek).
I was at GR for only 2 weeks, but it was a fun experience to get in front of people to talk about my punk’d baklava and how I had infused it with the exact beer they were drinking.
Week one, I made up my favorite Baba Black Beer and Chocolate baklava as well as 2 new flavors: Lemon & Cashew, and Banana’s Foster.
Uinta’s 801 Pilsner paired well with citrus and lemon, so I decided to create a baklava that resembled a lemon pie with a middle layer of lemon curd. The cashews added a nice creamy touch to finish it off. The Pilsner syrup and the lemon played well together as the flavors danced in your mouth.
I used Uinta Cutthroat Pale ale to complement the sautéed bananas, walnuts and chocolate. This added richness complemented the sweet banana filling. Using left over filo dough strips, I made little, filled filo cups topped with a crunchy, crinkled filo top. It was explosive to eat as syrup and sweetness oozed with each bite!
Week two brought out Baklava Noir (Black beer & chocolate), Imam Bayildi and Feta & herb Börek. Imam bayildi contains eggplant, tomatoes, and garlic in copious amounts of olive oil. I could sit there and eat the whole tray-eggplant and tomatoes are my absolute favorite combo! Lastly, I made the traditional Feta and herb sprinkled on top with black caraway seeds.
People were pleasantly surprised with the bite sized savories and bought 6 pieces at a time! Their curiosity in my Boozy Beer baklava was definitely in my favor as they tried to guess which beer before I told them which was which. I may have only been at GR for a few weeks, but it was a fun experiment and experience for all who came out to play!

This summer has been filled with experimental cooking and Baklava challenges. My daughter Mina decided she was going to challenge me to make a Twizzlers Red Licorice Baklava.
I have to say that I was a bit reluctant, but I dove in and gave it a try. I figured this was a better challenge than her other idea: Potato Chip Baklava. It was very red and actually very good. When I offered it to willing victims to try, they were reluctant because they didn’t like the actual red licorice candy. Imagine their surprise when they liked it!
It got me thinking about other candies to pair with baklava. Maybe I will try an M&M baklava next! What candies would you challenge me to try in my baklava?

Last month, I had a fun challenge: To create German inspired baklava. I had once done a Mexican Baklava, so why not try a German one!A friend had posted on my Women’s Networking group the need for a dessert sponsor for an Oktoberfest. Never shying away from a challenge, I stepped up. I had absolutely no clue how I was going to pull of a German baklava!
I decided to Google “German Desserts” and see if I got inspired. I did! There were a few German cookies that used spice, almonds, and marzipan. That seemed perfectly adaptable! Using the same nut measurements, I mixed almonds, cinnamon, and 1/2 a tube of marzipan.
The next one was a no brainer: Apple Strudel. I have to admit, I was a bit nervous to use fresh fruit because there were too many variables that I couldn’t control: Would it make it soggy? Would the apples cook down too much or not enough? Do I add the normal amount of syrup?
I decided to try 3 Braeburn apples and 1 Fuji. Cutting them up tiny and mixing them with lots of cinnamon, sugar, and some cornstarch, I layered them in the middle of the baklava. The whole house smelled like apple pie by the time it was done!
Now it was time to test them to see if they passed the German Baklava Challenge. I brought them down to the SLC Green Drinks event. Frody, the German Brat maker, was the first to try and he gave them 2 thumbs up! The event drew over 200 people and almost 300 pieces of baklava were consumed in about an hour! I consider this challenge a success!
