How to make potato Halwa in 6 minutes
Ingredient:
Potato - 300 (4 or 5 medium size keelu)
Sugar - 100 grams (half cup)
Ghee - 4 tbsp
Milk - a cup
Raisins - 1 tbsp (break the stalk and wash)
Cashew - 1 tbsp (cut into 5-6 pieces of cashew)
Cardamom - 5-6 (peel and grind)
Almonds - 6-7 (finely chopped)
How to make Potato halwa
Wash and boil the potatoes, cool them, peel and break them.
Put 2 spoons of ghee in the pan and let it heat. Put potatoes in ghee and roast them on a low flame for 7-8 minutes while stirring with a spatula. Add milk and sugar, raisins and cashews to the fried potatoes. At this time, keep stirring the pudding continuously with a ladle, potato pudding will be ready in 6-7 minutes. Turn off the fire Add cardamom powder to the potato halwa and mix. Add the remaining ghee too, take your potato pudding is ready.
Take out the potato pudding in a bowl. Garnish with chopped almonds. Serve hot potato pudding and eat. This pudding tastes great even when it is cold.
You can remove any nuts in your potato pudding (Alu ka Halwa) and also add nuts of your choice.

FOR THE DOUGH
Wheat flour, 2 cups
Salt, 1 tsp
Oil, 2 tsp
Water for kneading dough
STUFFING
Onion, 1 cup (sliced)
Boiled potatoes, 4 medium sized
Green chillies, 2-3 finely chopped
Whole coriander, 1 tsp
Asafoetida, a pinch
Ginger, 2 tsp (finely chopped)
Red chili powder, 1/2 tsp
Mango powder, 1 tsp
Garam masala, 1/2 tsp
Salt, as per taste
Green coriander, 2-3 tbsp (finely chopped)
Cashews, 15-20 finely chopped
Raisins, 1 tbsp
Oil 2 tbsp (for making stuffing)
To bake oil parathas
HOW TO MAKE ALOO PYAJ KA PARATHA / METHOD OF MAKING POTATO ONION PARATHA: -
For kneading the dough, mix all the ingredients and mash them well.
Knead the soft dough by adding a little water.
Apply some oil or water on the dough and cover it with a wet cloth and keep it for 15-20 minutes.
Till then we will prepare its filling. For this, heat oil in the pan. Add whole coriander and asafoetida.
After 1 minute add sliced onion to it.
Keep the flame on high and roast the onion while stirring continuously for about 30 seconds.
After 30 seconds, add all the other ingredients like dry spices, boiled mashed potatoes, cashews and raisins and mix it well.
Roast for 5 minutes and then add green coriander and turn off the gas.
Stuffing is ready. Allow the mixture to cool.
Divide both the flour and the stuffing into 15 equal portions.
Prepare the paratha by filling the mixture with flour. And put the golden pan on both sides on a hot pan.
Prepare all the other parathas in this way.
Delicious and spicy aloo pyaj ka paratha / potato onion paratha is ready. Serve it with curd, boondi raita, mango pickle, carrot pickle, or any other pickle, etc.

Ingredients :- 1. Par Boiled Rice – 1 cup 2. Regular Rice -3 cups 3. Split Black Gram – 1 cup 4. Methi / Fenugreek Seeds – 2 tsp 5. Salt – according to taste 6. Water – as given in instructions Instructions to make the Batter – 1. First the rice – Mix both kinds of rice and the fenugreek seeds. Wash in running water till the water runs clear. ( first it will be milky white, but 3 – 4 good washes will give you nice clean rice with no mucky white water) 2. Second the Split Black Gram – Wash the dal the same way as the rice till the water runs clear 3. Soak – Soak the rice with 3 and 1/2 cups of water 4. In another bowl, soak the split black gram in 1 cup of water 5. Let them soak for 6 – 8 hours ( usually this is done on a sunday early morning so by evening it is ready for the next step 6. After soaking, grind the rice and the gram separately. You could use a food processor too but you want to make sure that the batter is nice and fine 7. Finally once you have both the rice and the gram in a batter , combine the two in a big container ( make sure that the container is only 60% full once you have poured both the rice and the gram batter. Give the batter a quick mix and set aside to ferment 8. Now typically this step is done over night. But do give it atleast 10 hours in a warm place. I have seen that if the temperature is above 25C the batter ferments faster and the batter is much better 9. After the given time your batter is ready! Add salt just before you start making your dosa Instructions to make the dosa 1. First grease your pan / tava / griddle with coconut oil lightly . Then spoon some of the batter onto the centre of your pan. Make sure you use a nice long spoon with a round base that will help spreading the batter evenly around the pan 2. So after pouring the batter in the centre of the pan using the back side of the spoon, push the batter outwards in a circular motion. After the batter is evenly spread, add a few drops of coconut oil around the dosa and wait till you see the edge and the thin sides, turn brown. That is when you have to turn the dosa over.
