Today’s keto lunch offering:
Crispy Cheese Flat with Serrano Pepper, Shrimp & Pulled Pork.
Topped with sriracha aioli and cilantro cream sauce.
Tonight’s keto dinner offering:
Grilled Pork Tenderloin with Bacon & Brussels!
Pretty straightforward tonight; grilled the tenderloin with basic seasoning of granulated garlic and S&P. The smoker grill set at 350, it went until it hit a nice medium doneness.
In parallel, I bucked up some bacon and Brussels sprouts and tossed them on a deep-welled baking sheet and into the oven set at 425, until golden and roasted. Tossed that around a bit once while roasting to coat the spouts with the bacon fat.
Brought the tenderloins in off the smoker when they hit 140F internal. Made a quick glaze of red pepper jelly, stone ground mustard, salted butter, chopped rosemary, Nope Sauce & black pepper.
Popped that in the oven for a few to glaze up a bit.
Pulled at 150F, let it rest and cut into medallions. I was concerned about the fat content being a little low for keto, so so added a bit of melted butter after the pics were taken.

Tonight’s keto friendly dinner offering:
Lemon & Thyme Cod en Papillote, Bacon Wrapped Brussels Sprouts and Spring Mix.
Cod en papillote is a super simple and really cheap way to get great flavor while eating light. Frozen cod was like $3 a package on sale a while back, each contained two fillets.
Quick and simple assembly: tear off one 18” long piece of parchment paper per fillet. If you’re doing one large piece, just make you parchment is long enough to give plenty of space to fold it up around the fish. Seasoning consists of s&p, garlic powder, chili flakes, a sprig of thyme, thing slice of lemon and a pat of butter. Wrap the paper up each side, making a packet, so you can fold the tag ends up together, crease and seal tightly. Forming a tight seal is key.
Bake at 425 until your packets are poofy, slightly golden paper and steaming. Usually takes 8-13 mins, based on your fillet thickness. Check for doneness with a thermometer to be sure.
Plate and drizzle with the buttery drippings to get all of those flavors and the fat content for keto.
The rest is pretty self explanatory.

Brazilian Chimichurri Skewers and Butternut Squash “Faux-sotto”!
I love this Brazilian churrascaria down the road from me, Texas de Brazil. They have huge skewers of marinated grilled meats that they bring around to your table buffet style. The joint is RAD; I highly suggest it if you’re near one.
I’ve been craving it, but I’ve too cheap to pull the trigger on dining out, so I aimed for that flavor at home tonight. Sorry, very few pics of the process tonight.
Beef seasoned with lemon juice and zest, oregano, cumin, red pepper flakes, low sodium worcestershire, and garlic hit the grill as skewers. This works well as a marinade for flank, sirloin, etc. whatever you’ve got will work. Just make sure it’s got good fat content to it.
The chimichurri is pretty simple, and is the key element to churrascaria in my opinion. Red wine vinegar, red pepper flakes, fresh flat leaf parsley, fresh oregano, red pepper flakes, black pepper, minced jalapeño, lemon juice + zest, smashed fresh garlic, black pepper and Lawry’s salt hang out, covered, at room temp in a glass bowl for a few hours. Mash it around a bit to get the herbs to macerate in the acid. Add EVOO after those first few hours and mix again. Let that sit for a while. The longer, the more married the flavors 👌. I swabbed some on the meat toward the end of grilling too.
The butternut squash fake risotto was made from leftovers from last night’s meal. Originally steamed zoodle style, I had lots of extra. So tonight I chopped it up kinda fine, and sautéed with butter, thyme, truffle olive oil, Parm and a splash of heavy cream.

The whole self love thing is good and all but some people can’t fathom being loved. They can’t imagine there being anything good about them. So they can’t simply just stop doing unhealthy things, there’s a process.
Before self love you have to invoke self tolerance and self neutrality.
If you can’t say “I love my body!” say “my body gets me from place to place.”
If you can’t say “I’m beautiful,” begin by shutting down the “I’m ugly” thoughts and saying “I’m a person.”
If you can’t say “I’m valuable” begun by shutting down the “I’m worthless” thoughts and say “all people deserve basic respect, and I’m a person.”
If you can’t say “I’m important,” or “I’m kind” say “I am the one who waters my plant every week” or “I am the one who tips the kind barista down the street” or “I am the one who makes sure my dog does not eat plastic” or “I am the one who leaves long comments on people’s fan fictions.”
I’ve genuinely never seen a way to bridge the gap, especially body-wise. There’s loads about self-confidence and loving your body EVERYWHERE, but no one really explains how to get there. It’s great to have the former, but I’m glad this info is out there.
once you stop fantasizing about that ideal version of yourself and start working towards becoming that person by setting your alarm clock earlier and actually going to the gym and actually volunteering at places and actually eating healthier and not procrastinating and working just a little bit harder you’ll realize that it was so easy all along. becoming your ideal self will only ever exist in your mind until you make the decision to work towards becoming that person. get up!! get going!! it’s now or never!! there is no light at the end of the tunnel!! get that flashlight and pave your own path bitch bc no one else is going to do it for u!!
