Keto Lemon Herb Mediterranean Chicken Salad

Ingredients
Marinade/Dressing:
2 tablespoons olive oil
juice of 1 lemon (1/4 cup fresh squeezed lemon juice)
2 tablespoons water
2 tablespoons red wine vinegar
2 tablespoons fresh chopped parsley
2 teaspoons dried basil
2 teaspoons garlic , minced
1 teaspoon dried oregano
1 teaspoon salt
cracked pepper , to taste
1 pound (500 g) skinless, boneless chicken thigh fillets (or chicken breasts)
Salad:
4 cups Romaine (or Cos) lettuce leaves, washed and dried
1 large cucumber diced
2 Roma tomatoes diced
1 red onion sliced
1 avocado sliced
1/3 cup pitted Kalamata olives (or black olives), sliced (optional)
Lemon wedges to serve
Instructions
Whisk together all of the marinade/dressing ingredients in a large jug. Pour out half of the marinade into a large, shallow dish. Refrigerate the remaining marinade to use as the dressing later.
Add the chicken to the marinade in the bowl; marinade chicken for 15-30 minutes (or up to two hours in the refrigerator if time allows). While waiting for the chicken, prepare all of the salad ingredients and mix in a large salad bowl.
Once chicken is ready, heat 1 tablespoon of oil in a grill pan or a grill plate over medium-high heat. Grill chicken on both sides until browned and completely cooked through.
Allow chicken to rest for 5 minutes; slice and arrange over salad. Drizzle salad with the remaining UNTOUCHED dressing. Serve with lemon wedges.
Notes
Add 1/2 cup crumbled feta to give the salad an even better flavour!

Crack Chicken
Here's what I've been smelling in my crockpot all day 😋
Now, I will acknowledge it doesn't LOOK pretty (lol), but it's delicious! (Every time I make it, I'm on keto and my husband always laments because he feels it would be SO yummy as a dip for some wheat thins, or a really good sandwich melt. Which, probably!)
Here's the macro information, as well as the ingredients and instructions. I hope you try it out, because I personally love it!
Ingredients:
2 pounds of chicken thighs
x1 package of sliced green onions
x1 2.8oz jar of bacon bits (or 8 slices of cooked bacon, cut up)
x2 8oz blocks of cream cheese
x1 2cup package shredded cheddar
x2 Tbsp of dried chives
x2 Tsp of garlic powder (alter to taste)
x 1 Tsp of onion powder (alter to taste)
Instructions:
Place chicken in crockpot. Add spices and bacon bits. Cover with cream cheese. (I personally leave the cream cheese out for an hour so it's a little softer, then cut it in to cubes, but it's not necessary.) Cover and cook on low for 6.5 hours. Mix in your shredded cheese, cook for 30 more minutes. Enjoy.
(If you choose to cook on high, the total cook time is 5 hours, but I've never done it.)
This makes 8 servings. I cook mine in the crockpot, then transfer it to a casserole pan. What I normally do is fill the casserole pan, then anything left over from the crockpot is what my husband and I eat that first night. (It's usually two pretty decent sized portions.) I find it easier to portion it out the day after, when everything is cooled and easier to cut.
