I DID IT!!! Failed on my first try yesterday due to over proofing the dough. Stubborn and curious as always, I made the pâte fermentée yesterday and today I followed Peter Reinhart's instructions and recipe to the t. Lo and behold: my first successful three baguettes! One person I know for sure who would have enjoyed this immensely is my late father, together with his beloved croissant. This is for you Papa.
