Popular opinion is that Her Sweet Kiss is a song about Yennefer and Geralt, but I strongly believe it's Yennefer, Geralt AND Jaskier himself.
It starts off with the verses using the pronouns "she" and "me", leading the listener to think that "she" is the direct love interest of "me", the person whose POV it's from. This is where people would ordinarily think it's Geralt, about Yennefer.
But here are the lyrics from the 2nd verse:
Her current is pulling you closer
And charging the hot, humid night
The red sky at dawn is giving a warning, you fool
I’m weak my love, and I am wanting
If this is the path I must trudge
There are 3 parties in this song. "Her", "me, and "you".
If the POV is supposed to be from Geralt about Yennefer, why would he think the 2nd Person is being pulled towards her, and why is he offering them his penance? There's no character that this sounds like it could be about.
BUT if you think, who's the person who's always been observing Geralt and Yennefer's story, who's been at the side of a person they'd feel loss and heartache for being pulled away? It's Jaskier.
Yes, I highly believe this song is from the POV of Jaskier mourning the heartache and loss of Yennefer pulling Geralt away, of Geralt falling for her, and Jaskier pining for him and still loving him anyway.

Garrotter, jury and judge
In ep 1, when Geralt introduces himself to Marilka, she responds "like garrotter?" HMM. In ep 6, when composing Her Sweet Kiss, Jaskier tries to decide between "handsome garrotter" and "gorgeous garrotter", but what happens at the end of ep 6? Geralt tells him to leave, and the heartbroken lyrics ends up using just "garrotter".
An argument can also be made that "her" was never actually Yennefer, but more symbolic, referring to destiny instead. Because wasn't that the big reason for the fallout between Jaskier and Geralt? Maybe all this time we thought it was Yennefer when it was a red herring for destiny, and Jaskier was never jealous of her, but heartbroken over how destiny split him and Geralt apart.
