Cajun Chicken Wings
Ingredients
1 (5 lb) bag chicken wings
1tablespoon cayenne
2tablespoons paprika
2tablespoons garlic powder
1tablespoon dried oregano
1tablespoon dried thyme
1tablespoon onion powder
1tablespoon salt
1⁄2teaspoon white pepper
1⁄2teaspoon fresh ground black pepper
1⁄4cup vegetable oil
Steps:
Mix marinade/seasoning together in a zip lock bag. (Double bag so no leakage)
Place chicken in the marinade. Marinate for 24 hours and up. The longer the better.

Marinade/seasoning is good on chicken thighs and chicken breast.

I used 4 pounds of chicken wings or chicken thighs or chicken breast. Half this marinade if using 2 pounds of chicken.
Do not change the seasoning amounts EXCEPT used half the salt for this recipe. Maybe less oil if it's used for chicken with skin (wings and thighs). On chicken breast the marinade with oil keeps the chicken breast VERY moist.
Bake wings and thighs ON foil at 400 degrees for 45 minutes. Flip halfway through. Do not use a wire rack, the skin will NOT be crispy. Place the largest surface for skin on the foil.
Bake the chicken breast ON wire rack in a conventional oven for approximately 20-25 minutes at 375-400 degrees. The oil and fat will drip off the chicken breast. This creates a grilled effect to the chicken.
