An actual 1 hour spoon
Same piece of oak from the Botanic gardens
I made a spoon
It's made of English Oak from the Botanic gardens.
I wanted to see if I could make something in a day. I didn't manage it, but it wasn't much longer than that.
Panache
Rhubarb & grape
# Speculaas Justino (maybe) Not sure if the name Justino requires fruit, but here's one with biscuits. It's delicious but super fatty. It might need an emulsifier of some sort. I still haven't worked out how to work it into a real drink beyond just shaking it up and putting it in a glass.

Office eggs Benedict
I didn’t take any pictures because I was banging out eggs as fast as I could.
My hands are a bit clumsy, I hope I’m better in my usual cooking. Maybe video training is a good idea here too!?
People were pretty into the results.
Rib Rub
Grinding manually takes a while! Very good.
Kaizen foam, getting there
There are still some things to let into the foam, but I'm doing it slowly to see how I feel about each thing.
I really like having a tool chest in the kitchen.
Lime marmalade
Eggs Benedict
Whipped hollandaise is fantastic. Serves about 6 but all went into two mouths.
Made extra shallot vinegar as that's the most time consuming part. That should make future batches really easy.
Country pate
I don't have a mincer, so I chopped this by hand. It's the second one I made from the standard quantity. The raw mix freezes well. I added more dried fruits to this one!
Delicious.
2:1 simple syrup
I’ve been away for a while with no kitchen, so this is a way of easing myself back in.
This is the recipe with the glucose syrup in it. I had a refractometer for 2 years in Sydney, and never used it. Now I don’t have one I want to know what brix this is!
eggs Benedict
Eggs came out perfect. First time low temp eggs have worked for me.
I might back off the acid in the hollandaise next time, but then again we did have 3 people's worth of sauce each because we're gluttons.
pickled onions
These have been going on a lot of my boring lunches and making them a lot less boring!
