made some vegan pesto for dinner last night!! I added it to bow tie pasta & sautéed some cherry tomatoes, broccoli, spinach & tofu to mix in. sprinkle some nooch on top & voila! 🌿 so yummy even my meat/cheese-eater boyfriend had 2 heaping bowls. ✨✨
recipe:
• 1 cup loosely packed basil
• 1/2 cup packed spinach
• 3/4 cup raw, unsalted cashews
• 4-5 tbsp nutritional yeast (depending on how cheesy you like it)
• 3-4 cloves of garlic
• 1 tbsp lemon juice
• 2 tbsp olive oil
• 1 tsp salt (or to taste)
• 3/4 cup water
add everything to a blender & bleeeeend babyyyy!
