Gooey Toffee Blondie-Brownie Bars
Back in November, my boyfriend took me home to meet his friends and family a province away. I learned that the best way to make friends is through their stomachs.
As I knew one of the events we would be doing was a Star Wars Party, I figured I would bake some special cupcakes just for them! Sadly, I learned the hard way that cupcakes don`t travel across provinces very well. By the time we actually got to the party, Tyler had accidentally thrown a couple bags on top of the box, followed by the bags and the box falling to the floor of the car when we got to the party... Needless to say my cupcakes were ruined.
We are going back again in the next two days to visit his family/friends, my aunts and watch Taylor Swift and Ed Sheeran in concert. I'm meeting some more of his friends and family that I didn't meet last time, so I decided to bring some more baked goods! Learning my lesson from last time, I decided I would bring some baked goods that wouldn't matter if they got squished. I decided to make two different treats. The first of which was a Toffee Blondie, but the recipe didn't make as much as I wanted! So my Gooey Toffee Blondies became a Gooey Toffee Blondie-Brownie Bars.
Toffee Blondie
1 cup butter
1 cup white sugar
1 1/2 cup brown sugar
3 eggs
2 tsp vanilla
1 tsp cinnamon
1 tsp baking soda
1 3/4 cup flour
1/4 cup corn starch
1/2 package of toffee bits
Brownie
1/2 cup water
1/3 cup cocoa
1 1/2 cup white sugar
1 cup brown sugar
1/2 cup butter
3 eggs
2 tsp vanilla
1 tsp baking powder
2 cups flour
1/4 cup cornstarch
Start with the Blondie...
In a saucepan, melt butter with all sugars. Cook on medium heat until it begins to bubble rapidly. Remove from heat and put in mixing bowl.
Beat in the eggs and vanilla. Sift in the flour, cornstarch, cinnamon and baking powder. Then fold in toffee bits.
Pour on bottom of a lightly greased 9 by 13 baking pan. If desired, sprinkle some cinnamon and remaining toffee bits on top.
Move onto the brownie...
In a saucepan, bring water to boil with cocoa and sugars. When all sugar is dissolved, add butter. Remove from heat and put in mixing bowl.
Beat in eggs and vanilla. Then sift together flour, cornstarch and baking powder.
Pour brownie mixture on top of blondie mix.
Put in oven set at 350 degrees. Bake for about 25-30 minutes of until top begins to crackle.
Fruity Meltaways
Yesterday I decided to fill my TARDIS cookie jar. Because one type of cookie isn't good enough, I decided to make two!
During my cupcake experiment I had a lot of fruit extracts. Since I'm still not ready to bake any more cupcakes, I decided to use them for some fruit cookies! Sadly, after all my baking was done i found out one very very sad fact... My TARDIS cookie jar is in fact NOT bigger on the inside and apparently unable to hold over 6 dozen cookies...
Fruity Meltaways
3/4 cup butter
1/3 cup icing sugar
3 tablespoons fruit extracts of your choice
1 3/4 cup flour
1/4 cup cornstarch
Whip together butter and icing sugar with whisk attachment until nice and fluffy
Whip in fruit flavorings.
Sift together flour and cornstarch. Then fold into mixture.
Put dough to rest in the refrigerator for an hour. While it is resting, preheat oven to 350 degrees
Roll dough into balls. Put on cookie sheet lined with parchment paper. Bake 10-12 minutes.
That sure is one majorly overflowing TARDIS cookie jar...
TARDIS Chocolate Chip Cookies
Just recently, I started a new chapter of my life. I graduated from University with my Bachelor of Education and moved into my own little house.
If you were to walk into my house, you would be over whelmed with the Nerd factor. A life sized cut out of Sheldon Cooper welcomes all my guests, the top of my kitchen cabinets are lined with my boyfriends PEZ collection and I have an entire cabinet full of board games. The kitchen also hosts my TARDIS cookie jar.
I've been subbing and volunteering like crazy lately, so I have not yet had time to do much baking. Today was my first real day off so I decided to do my first bit of baking in my new place! My TARDIS was empty, so I decided some cookies were in order! The following is the most amazing cookie recipe I have ever created! I name them the TARDIS Chocolate Chip Cookies, after my TARDIS cookie jar.
TARDIS Chocolate Chip Cookies
3/4 cup butter
1/2 cup sugar
3/4 cup brown sugar
1/2 cup confectioners sugar
1 egg
1 tablespoon vanilla
2 tsp almond extract
2 cups flour
1/2 tsp baking soda
2 cups chocolate chips
Preheat oven to 350 degree
Whip together butter and all sugars with whisk attachment until nice and fluffy
Add in the egg and vanilla.
Sift together flour and baking powder. Change to the paddle attachment. Mix in flour and chocolate chips
Roll dough into smaller balls and place on a greased sheet. Bake for 10-15 minutes.
This is what a 22 year old has for breakfast. Go me. Best birthday breakfast ever.
You don't say cocoa in ingredients list, but directions say to add it in fruity pebbles cupcakes.
Thank you so much for pointing this out! The fruity pebble cupcake does not have cocoa in it. I will fix it right away!
Funky Monkey Cupcakes
One of my New Year's resolution was to try to do little things to make life for those around me easier and more enjoyable, whether it is a friend, acquaintance or stranger. Today, my job was made easy when I was asked to make cupcakes for an individual since "they are better then the ones you pay for in stores". So, I decided to make his day by accepting his request. This one is dedicated to my work "boys". You know who you are! :)
Truth be told, I miss my cupcakes. Creating a new recipe used to be the highlight of my week. But by the end I really did want a break. I think I'm just finally starting to miss it, but with this being my last year of university and having a relationship and mentoring a youth club i don't have as much time as I used to (which wasn't alot to begin with). So as much as I say I'm doing this for them, I'm really doing this one for me as well. So here is my Funky Monkey Cupcake! One part banana, one part chocolate, one part coconut and one part funk ;)
PS- if you ever have an idea for a cupcake flavor but don't know how to do it let me know! I will try my hardest to experiment and create a recipe that will work for you!

Salted Caramel Apple Cupcakes
This year is my last year of university. Next year, this time, I will hopefully be settled into a classroom of my very own shaping young minds. This thought excited me so much I actually started a different blog missmccrimmon.tumblr.com
As this is my last year, I get to celebrate! To pay for this event, my cohort (class of 40 education students) decided we were going to fundraise to raise money to have the best grad we can possibly have. Our first fundraiser of the year was a fall bake sale!
