Day 1 of a 6 week fitness challenge with @evolvefitnesshalifax means delicious but lower calorie, lower simple carbs, higher protein food. Believe it or not, this isn’t all I ate today (there was protein waffles with fresh fruit and Greek yogurt as well + an apple), and it came in under 2000calories. The 40 min at-home bootcamp certainly helped justify the waffles 😂 . . . Blueberry Banana Protein Shake: half a banana, 2 scoops protein powder, 3/4 cup skim milk, 3/4 cup frozen blueberries, 2tbsp vanilla Greek yogurt 🍌🥛 . . Sweet Potato Black Bean Quinoa Burger w/ Chili Lime Cilantro Dressing on whole grain toast with arugula and cucumbers. . And Potato Salad! Weird fact - cold potatoes aren’t as bad for you as hot ones. Potatoes, celery, red onion, green onion, dill pickle, and boiled egg. Trick - toss the still warm chopped potatoes with vinegar and let cool while you prep your add ins.
