Drug free school zone. The zone where you can have your drugs is over there.
So it was a long holiday weekend. We didn’t have much in the walk in for family meal as far as animal proteins go. So I decided to ask how to make fresh pasta! Chef talked me through the process and I made cacio e Pepe. My favorite dish I had never had. This was simple and fun to make, but I feel like with more practice I could get much better product.
Chef put together a feast of of the seven fishes family meal for us tonight, which is an Italian tradition for Christmas Eve that I just learned about. It looked great but I just inhaled a handful of shrimp and had to keep scrubbing. Not pictured : the clam chowder amuse shooter and shrimp balls.
That fucking gratin, damn.

Prepkitchen little Italy answers the question: "where do I get pork belly fried rice AND craft beer?" (at Prepkitchen)
Roasted Asparagus | Creamed quinoa pilaf | Pickled mustard seed | Hedgehog Mushrooms | Brown Butter. Octopus | Bone Marrow | Charred Lemon | Country Toast with Parsley Chickpea Purée Pork Milanese | Pickled Fennel | Fine Herbs | Crispy Proscuitto Spring is here. The crew has all agreed that it is the most tedious prep season of them all. I'm really glad the front of house has taken to shucking peas so well.
