A play on the British classic 'steak and onion' combinations for our test kitchen. Sir loin, onions, wild garlic, onion caramel. In this dish there is onions 6 ways, and it also forms the bases of the wild garlic espuma. The concept is based off bringing back memories. For me, this dish evokes those classic Aussie BBQ memories; meat, onions, and that lovely charred taste. Glad to finally put this together and excited to make the changes this dish needs to take it to the next level.
