an author i love just tweeted about how âbig joy and small joy are the sameâ and how she was just as content the other night eating chocolate and cuddling her dog as she was on her Big Trip to new york and honestly. i think thatâs it. this morning i was listening to an audiobook while baking shortbread in my joggers and i realised i really didnât care what Big Things happened in my future as long as i could keep baking and reading at the weekend and maybe that is the kind of bar we have to set to guard ourselves against disappointment. just appreciate and cherish the mundane stuff and see everything else as a bonus.

actually i love growing older and learning how i work as a person like realizing what kinds of fabrics feel best on my skin or what brand of yogurt i like best or how I want to be touched. watching myself change, enjoying brussel sprouts when I used to hate them as a child, understanding why I got angry in that one conversation 10 years ago⊠there are so many mysteries inside me that i have yet to unravel and there will always be more and sometimes i think maybe its all worth it

My friend asked how I learned to cook and the answer is I didnât. I know like 5 things about cooking and they are:
Always use more garlic than the recipe calls for
âEhhh fuck it close enoughâ is a great measurement tool
Find like 5 recipes that you like, adjust them how you like them, make them until you hate them
Clean as you go
If a recipe is from a mommy blog, you will need more spices
If anyone wants to add, please do

Too much salt? Add a lil sugar
-if you feel like something is missing tastewise but you donât quite know what it is, try salt, sugar or acid first (lemon juice or a splash of vinegar). honestly, itâs usually the acid
Pepper. Everything always needs more pepper than you think.
If you cook a new recipe or something that cooks really fast (like stir-fries) always prep before you start cooking. If you know a recipe you will know where the gaps are to prep the remaining ingredients but with new recipes you donât know that and this will catch you out at some point.
Also, I second the âfuck it close enoughâ. I learnt cooking with a cookbook (now sadly out of print) that only had purposely vague recipes but with a list of alternative ingredients and plenty of tips how to adjust the taste or the consistency in different ways, so youâd learn how to make up your recipes on the go. I donât use this cookbook much these days because it taught me its lessons so thoroughly. I do have a lot of other cookbooks because if I cook something that Iâm not familiar with I like to mash up several recipes to get something thatâll be closer to what I like.
