Hash brown & egg breakfast cups by @the_organic_heart (Makes 4 cups): 4 organic eggs 3 small red potatoes, peeled & grated Fresh chopped parsley Crushed red pepper Pink salt Preheat oven to 425 degrees. Peel & grate your potatoes. Grease a cupcake pan & place the grated potatoes into the cups smashing them down to create a bowl. Bake for 15 mins to create the mold, then crack 1 egg into each hash brown cup & sprinkle with parsley, pepper & salt. Return to the oven & bake 15 mins (for medium eggs) or 18 mins (for medium well eggs). Serve with organic ketchup or chili sauce. Enjoy! .
