Eggplants with herbed tomato sauce and cheese Parmigiana di Melanzane 2 eggplants (sliced) 1 cup garlic and herb strained tomatoes (or just use pasta sauce with fresh garlic and herbs like I did) 1/2 cup parmesan cheese 2 tbsp olive oil Salt and pepper Heat broiler Brush eggplant slices with olive oil and season with salt and pepper Grill 4-5 mins on each side, single layer only so may have to do this step in batches Preheat oven to 190C or 375F. Spoon some sauce, layer eggplants, then cheese, repeat layers ingredients are used up. Bake 20-25 mins. I served this with garlic green beans and it made a great vegetarian dinner!
