Is it a Swedish pancake, is it a mutant crepe, is it a deflated pancake, did I skin the face and butt off a pancake?
Its:
1 cup flour (gluten free garbanzo bean flour works)
1 cup sugar (if you add honey you can cut this in half)
Bit of baking powder
Several tosses of pumpkin spice
2 tabs of melted butter
1 egg
1 cup milk (I use oat milk)
Splash or two of vanilla
Mix dry stuff in bowl, set aside
Mix egg, milk and vanilla, once mixed add butter while stirring, it’ll make little bitty butter chunks as it cool shocks but that’s what you want
Dump slowly half of dry mix into wet mix, stir slowly. Before adding the rest smell the amalgam and focus on spice smell, you want enough the sinimum smell tickles you nose so adjust pumpkin spice, mix into wet rest but don’t over stir. It’ll look like it’s a bit lumpy.
Set aside and let it mellow while you heat up your skillet or griddle. I use cast iron because I only use stainless for soup or rice. So I can only tell you that I put it on six, if I hold my hand a few inches over the griddle and I have to yoink it away it’s almost ready.
Add butter before you drop one on.
Cold butter or peanut butter in jelly make good innards but as is or dipped in maple syrup good too.
(I eat half and leave the other half out in case the spirits want some- but if they don’t I do a little drive by snacking throughout the day)
