Katsu is one of those go to dishes for me. It’s quick, it’s easy, its double dipped in panko to give it that awesome crunchiness! Yay! Also, if you can’t find any Katsu sauce in the grocery (like me), I made my own katsu sauce as well.

Katsu is one of those go to dishes for me. It’s quick, it’s easy, its double dipped in panko to give it that awesome crunchiness! Yay! Also, if you can’t find any Katsu sauce in the grocery (like me), I made my own katsu sauce as well.
Shakeys Japan recently came out with a recipe for how to make their infamous mojo potatoes. And while this recipe does not follow them to the tee, the concept is similar. Firstly, I recommend steaming the potatoes to cook the inside and give it a fuller bite (Shakeys recommends microwaving it). Either way it’s going to be very hot so I suggest to run the potatoes under cold water. Afterwards it a batter wash for me that includes egg and a mix of flour, garlic powder, pepper, paprika, and cayenne pepper. (Shakeys’ recipe was to use chicken breading)
Ok so I’ve been on this mango smoothie journey for awhile and I’ve tried a whole bunch of stuff that included trying yogurts, sugars, juice and fruit combinations so I think I have a bit of experience now when I say that this is the best mango smoothie recipe.
I was supposed to make mango graham but because I still had a bunch of cream cheese, I decided to make a cheesecake instead. I did not want to bake so I decided to go the route of whipping cream and cream cheese, with a bit of mango purée. I added pistachios in the crust and on top. I also made mango jello because I had a bunch of purée left lol but honestly you could do without. Enjoy!
Combining my love of carbonara and bacon (because who doesn’t) then added some crimini mushrooms for flavor and four-cheese Alfredo sauce for a flavorful pasta.
How ot Make Tiramisu without Eggs ... This week is mother's day and also my brother's birthday so I decied to make tiramisu. I didn't use eggs in it. All I did was mix a bit of light creme with mascarpone that's been mixed with sugar and vanilla extract, plus a bit of Baileys irish creme. Topped with cocoa powder and chilled for at least four hours for a decadent treat. Again ,happy mother's day to all the mothers in the world.
Igado comes from Spanish word "higado" meainng liver. Indeed liver is the primary ingredient in this dish even as different variations of this dish has come about. The Igado I made is a bit different because of the use of liver spread instead of meat (because the lockdown had made it unable to get one), and crimini mushrooms which is a great mushroom for stir frying.
Tinola is a popular chicken stew with ginger and veggies. This version comes with chayote (or sayote) and spinach. Oother versions include malunggay and upo and dahon ng sili, among many others. A great way to end a cold day :)
The Pinoy version of chicken macaroni salad is a sweet blend of macaroni, pineapple, sweet pickle relish, cheese, raisins and shredded chicken for a fun dish. Enjoy
Made omelette this morning with spinach, mushroom, bacon bits and cheddar cheese. You can also use Swiss cheese (although technically you can just pick whatever’s in your fridge to turn into an omelette)...
Egg salad -- or as some people call it, egg spreads -- make for a nice “palaman” to your morning bread. For non-Filipinos, no, this is not the egg sandwich that Harley Quinn got in the Birds of Prey. In this recipe I made egg salad using honey mustard and mayo with relish. And ate it with Hawaiian rolls.
Making teriyaki salmon is fairly easy and it’s a dish that everyone enjoys. It stars by making the marinade composed of soy sauce, oyster sauce, teriyaki sauce, brown sugar seasoned with garlic and ginger. I added a bit of calamansi extract for the pinoy flare - I should say that anytime I see lemon or lime needed in recipe, I usually use calamansi instead. The salmon fillet is marinated for at least 30 minutes before being cooked in the pan. The salmon should be cooked on both sides and the entire process should take 10-15 minutes. I like to reduce the sauce until the it's caramelized so that it's got that thick sweet sauce that we teriyaki has. I served it with rice along with some blanched yu choy in the remaining sauce.
One of my favorite dishes from the Philippines is calls beef pares (pronounced “pah-ress”) which is beef brisket stewed in a sweet sauce made up of soy sauce, oyster sauce, star anise powder and brown sugar mixed with garlic, onions and ginger. It’s either served with rice but some pinoys would get it with egg noodles (a soup called pares mami)
Had some peeled frozen prawns that I was gonna turn into camaron rebosado but had a craving for mango chili prawns instead. Mango Chili Prawns is a sweet and spicy stir fry dish that uses mangoes and prawns mixed with sweet chili sauce along with garlic, onions, ginger, bellpeppers and cilantro. I also used a bit of soy sauce and calamansi extract.
Turns out I have some ingredients in my cupboard to make a proper ginataang mais at langka (Coconut milk rice pudding with corn and jackfruit).
Red ice tea is an easy to make drink that gives your cupboard iced tea some depth of flavor lol. Simply mix 1 tbsp of powdered lemon iced tea with 1/4th cup grenadine, and 2 cups water and pour over ice. Enjoy :)
I’m still on lockdown with an entire bag of baby potatoes so I decided to make a quick and easy bacon potato salad. It uses bacon bits as opposed to frying bacon and honey mustard instead of a vinaigrette. I also added arugula for a depth of flavor. Enjoy =)
