Shio koji marinated chicken - grilled, lime, Mayo, shichimi for #dinnerformrspigflyin. Koji keep the chicken moist and give it an additional sweetness. #shiokoji #koji

Spanish mackerel - perfectly charred, warm thru, butter foam, shallots. Sweet juicy succulent and rather uniquely executed. Love it @ester_au (at Ester Restaurant & Bar)

Always been facinated by #santol or #krathon fruit and when I see santol salad on offer here, I jump to the chance. It is done like #somtum with the same crab/fish spicy and pungency. The white flesh of the fruit, ever so slightly stringent cut thru the intensity. Mangosteen like sweet seed part balances it all out. Love it! (at Do Dee Paidang - Haymarket)
