For Nivian, xe just doesn't...it's not that she dislikes animals, but xe just never really bonded with them? Not on that level? And with their family being mere village folk and not really having that much money or even space for proper livestock, they just...never had pets or animals either. Later on, that does not get better but worse since xe finds it unnerving to actually understand what animals says.
With Sila, the Kallters also never really held livestock or had pets, but she's a lot more attuned to Jorvik and nature than e.g. Nivian and animals trust her, so indirectly, any wild animal she meets is her "pet" temporarily, lol.
and while Rachel doesn't officially have a pet, I headcanon that the Choir used to keep sheep or something. And maybe later, after she settled down and retreated into Wildwoods, she gets some bunnies or something else to take care of.

Regarding Garnok...hm.
Well, Rachel hates him, obviously. He's a danger to Jorvik - and not just Jorvik, but life in general. She's not a fan and she's ready to give her life to keep him in chains, even after "abandoning" the Choir and her oath to Aideen.
I think that Sila knows of Garnok (I mean...they live by Garnok's Fury and all that), and that she's...apprehensive of him? Like, in awe, but awe sounds to positive for it...the negative version of it? She doesn't fear him, not yet - maybe she would if she were to meet him. She's obviously labelled him the enemy though.
And Nivian is terrified. I mean, it took her probably a few months to actually believe Garnok is real - lots of nightmares and maybe close encounters with Garnok's followers? But when she ultimately believed in his existence, she became terrified - not just of him but the responsibility on her.

What do you think Jorvik looked like in that time? Like you mentioned the stuff about Firgrove, what are like the biggest changes that (have not yet) happend?
For example, were the ruins in Valedale occupied at the time?
I have to admit, that I've not thought much about the World Building yet, since I'm still going back-and-forth on if I want Nivian's story to take place after Jon Jarl's reign or if it would make more sense if it happened during the Jarl's arrival and all.
Overall, I think we can all agree that the towns and cities - places like Jorvik Stables, Jorvik City, Silverglade & the Equestrian Center, etc. just...weren't that modern, that expanded. I think it all looked a lot more how Valedale Village looks in-game nowadays, maybe Crescent Moon Village, too, just more rural and old and well, like its from the 13th-14th century, and not the 21st.
I'd say people lived everywhere on the island then, so yeah. I don't think people were really bound to villages and towns as they often are nowadays, but they resided and built where there was space. I imagine that Jorvegians were one big family, "one big village" so to speak, so there wasn't really fights and arguments regarding land and properties until the settlers arrived and changed things.
I've sadly not watched enough TV shows or movies set in that time, and for some reason BBC's Merlin is the only one that comes to my mind, lol, so...uh. Yeah.
This is one hell of a disappointing answer, I fear, but I have mostly focused on the characters and their sheets rather than the...very important world building and lore tied to the story, lol.

Well, Nivian...technically doesn't know how to ride a horse. Not properly, at least. Back when she was first discovered by the druids, she didn't know how to ride a horse so she always rode passenger with someone. Then, during an expedition through Wildwoods, they stumbled upon a herd of Jorvik Wild Horses and that's where xe met xer soulsteed - Tarragon! He's a stallion, really wise and patient, and surprisingly gentle with Nivian. Tarragon's coat is a mixture of the following in-game coats, I'd say:
For Sila, there isn't really a current model I can compare her horse to, but she'd obviously be riding a Fjord horse, given she's a Kallter. Most likely one with that grey dun coat color (I don't remember the term we use for that color, I'm sorry), but I do not like how...plastic the Gen 3 Fjord looks, so I'm waiting for a remake, hoping that'll be a better fit! But yeah, color-wise probably a mixture of the coats from Gen 1 and Gen 3. She rides a mare named Skadi, and the steed is rather curious and adventurous, similar to Sila. Both of them are really mature, resourceful, and understand how this world works quite well.
...god, I miss the Gen 1 Fjord.
And last but not least: Rachel rides a Friesian horse, specifically that (light) bay one from the newest Gen! She's a mare named Sunna, and she really shares her personality with Rachel.

Nivian's family lives in a village locate where today's Firgrove would roughly be. Back then, I imagine Firgrove didn't exist as it does today, and the pathway to Wildwoods was a lot more commonly used then. I want to think it connected like an "upper" and "lower" part of the village (not separated by wealth or anything), and Nivian's family lived in the lower part - the "Firgrove" part. While xer father isn't the official village head, but more so chosen by the people because of how trustworthy he is and all, they had one of the bigger houses among the village members.
For Sila, she lived in one of the Kallter's camps/makeshift villages right by the Icen Gate. As the chieftain's daughter, they of course resided in the main village of the tribe. Later, when she became a trader and "middleman" for Kallters and other Jorvegians, she lived in a small tent just outside the valley and toward Valedale.
While I mentioned that the Choir kinda resides by Jorvik's crater, they technically don't have a set home - the same goes for Rachel. They constantly roam all across Jorvik, ever vigilante and keeping an eye on the island they swore to protect. But, around the time of the AU taking place during the game's events, Rachel eventually moves into a hidden away house somewhere in the deepest part of Wildwoods.

Well, Nivian didn't even know Pandoria existed until after she was discovered to be the reincarnation, and even then, she didn't really...she never fully believed it. Xe struggled to believe a lot of the things tied to magic and the otherworldly, and you know. So, xe doesn't really have an opinion on it beyond disbelief. For other things, well...she's not a fan of the settlers, but she wasn't alive during the Jarl's time to personally meet him, yk. She's not a fan of him, though. And Galloper Thompson terrifies xem.
Born into a tribe that is quite attuned to Jorvik's magic and everything tied to it, Sila was aware of Pandoria's presence and always quite fascinated by it. She feels curious about it, but in an alert way. She was made aware of the destruction Pandoria could cause to Jorvik, but how can you not be curious when you've heard such mysterious things of that other realm? Regarding legends and such, she hates the Jarl and she doesn't really care of Thompson. He does not faze her. The Ice Witch she heard many stories about, but she never...she never dug deeper when listening to the elders' stories.
And Rachel is someone who respects Pandoria and what the realm and its Seers are capable of, but to really call her a fan would be wrong. Pandoria's existence as it is currently unfolding poses a threat to Jorvik and its people, which is enough reason for Rachel to be apprehensive and have more negative than positive feelings toward that realm beyond time and space. As a member of Aideen's Choir, I think it is quite clear that what she'd think of the Jarl and humans that harm Jorvik in general.

Uh, for Nivian, well, typical 13th-14th century fashion, I'd say. Later on, there's that druid fashion touch to xer outfits but, yeah. I barely know anything about todays fashion, so please do not expect me to know anything about its history, lol.
Sila wears mostly traditional Kallter clothing, most of it even made by herself - especially after leaving the valley and befriending Nivian. She had to adapt to the now warmer climate and sew new clothing for herself. There's always hints of fur and traditional Kallter motives there, though.
And Rachel, as an immortal, always wears whatever is currently worn by the people. Her most common "outfit" is the armor gifted to her by Aideen. You can imagine something like that of Dame Aylin from BG3, maybe? Not that dramatic, but you know. In that direction.

For Nivian, its any forest or woodland area, really. She grew up around what we today know as Firgrove and spent lots of time in the forests around xer village. Back then, I headcanon that the road leading away from Firgrove was surrounded by a lot more wood and the mountains of Jor nearby were also covered in a lot more trees than they are nowadays. She'd spent most of xer free time there, at least until that whole "reincarnation" and druid thing became relevant - than her favorite woods became the Hollow Woods and the areas by Wildwoods!
With Sila, it's the barren forests of Dinosaur Valley. Well, to be honest, any of the regions around the valley are her favorites - with the exception of the frozen waters, which she doesn't really enjoy as much, despite being capable of manipulating the water element. Specifically that area where the in-game elevator and introduction area are, and the area around Garnok's Fury/the volcano are her favorites.
And Rachel just enjoys any mountain peaks. The Choir resides by Jorvik's crater, and Rachel spends most of her time atop the highest mountains, where she can observe all of the island perfectly and most importantly, in tranquility. Also, the higher up she is, the "closer" she is to the sun, and that's where she feels most at peace.
And for the last question tied to that emoji: They're all nature lovers and city haters! Not that there really were big cities back around 1300.

Uh, well, Nivian discovering that she's the reincarnation kinda traumatized her. Everything that has to do with being Aideen Reborn and having magic abilities really scarred xem. It made her develop this fear surrounding xer identity and who she is: Either people see her as the "village chief's daughter" or as "Aideen reborn" and never really as...herself. And she's terrified that they'll never see xem as just Nivian. Plus, the treatment of the settlers toward xer family and native Jorvegians definitely left scars, too.
Sila, after the settlers tried invading the valley, became terrified that they'd try to exterminate her people - the Kallters. It's this quiet yet persistent voice at the back of her head whenever she sees non-native Jorvegians anywhere. Plus, she lost her brothers and their Deaths left her pretty shaken up. It's something she's not healed from yet, mostly due to how it affected her parents and made them basically "abandon" her in their grief.
An Rachel's just...generally terrified that Jorvik will eventually meet its end. If not through the settlers and humans, then through Pandoria or Garnok. It's this...thing she's constantly aware of. A fear that she cannot ridden herself off. She's not been really traumatized yet, and the only thing that could truly leave her scarred for eternity is surviving the destruction of Jorvik and awakening to her home being gone.

Well, as Aideen Reborn, Nivian has access to all abilities of each circle - I just haven't really figured those out for my AU world building yet lol. But, while she does have access to them, she's really low level and never really...gets the hang of it. The ability she's (unintentionally) most skilled at is understanding animal speech and conversing with them, lol.
Sila, just as the majority of Kallters of the younger generations, was born close to Garnok's Fury and thus, when she was born, magic was able to affect her much more strongly than most other Jorvegians. She was born with abilities that would most closely be categorized as Comet Circle (in-game Lightning Circle) abilities: She can manipulate the elements of wind and water.
As the original Sun Sister and Aideen's Shield, Rachel can access all powers of the Sun Circle, including original/ancient abilities that have gotten lost over time and can't be used anymore by today's generations. This includes powers tied to fire, protection/defense, and the sun.
