Recently I've been enjoying salads more :) here's my own favourite recipe ~
Spirallize as much courgette as you want, if it's been in the fridge I like to leave it to warm, and I'll sometimes add some soy sauce or lemon to flavour it a little ~
Boil some rice or quinoa, sometimes I'll just use microwaved rice if I'm in a hurry or not at my best
Fry some tofu in soy sauce and sesame oil, or have it raw. Personally I love the flavour and texture of raw tofu, but lots of people don't and frying it brings out amazing flavours !
Half an Avocado ~ so healthy and I find its a good way to bring some calories into the bowl so I can make it a sustainable meal. Half works best for me because I'm not so fussed with the taste but a full one is even better if you like it !!
Seeeeds~ I top almost everything I have with mixed seeds because they're so high in fibre and such an easy thing to add
Lemon juice or soy sauce ~ depending on what I added to the courgettes, I like bringing the flavour to the rest of the dish too ~
