Just working on a little unicorn cake

Just casting some isomalt in ice for a cake. Pretty easy sugar work, doesn't require any special equipment. You have to use isomalt instead of sugar to my knowledge, sugar is too sensitive to moisture. Heat some water and isomalt to 170-180 degrees Celsius, use a water bath to cool the bottom of the pot. Wait for the sugar to become a bit thick, the pour over ice. Wait about five minutes for it to set, then pull it out of the bowl (gently! And wear vinyl or latex gloves) and set it on a rack to drip dry/let the rest of the ice melt.
