I LOVE pumpkin, I really do! I could seriously eat it all year long, so I was super happy to be asked to prepare a recipe with pumpkin as a main star. I love pumpkin soup, but this time I wanted to try something different and I am so glad I did! When I was little, my mum made delicious apple pancakes and I thought similar thing with pumpkin would be delicious. I tried few pumpkin pancakes recipes and this one is perfect for me. I hope you like it, too. A word about frying them. They fry surprisingly quickly, so they need to be done on a medium heat, not high like crêpes. They need time to brown and set inside, but do not worry about them sticking to the pan, they really do not! You will only need a drop or two of oil.
Choose your coconut milk carefully. Many have additives and I never buy those. Yes, they are super smooth and creamy, but I always go for a natural one. You can blend it a bit, if you want to make it smoother. Also, add some water, if it is too thick. It needs to be either similar to normal milk, or a tad thicker, but not much
INGREDIENTS:
3 cups flour
2 cups shredded pumpkin
2 eggs
2 1/2 cups coconut milk
1 or 1 1/2 tablespoons baking powder
1 teaspoon salt
lots and lots of cinnamon (or some other spices you love, such as nutmeg or a gingerbread mix)
Choose a slightly larger pumpkin from a place you tested before. They differ so much and the thicker and creamier the inside, the better.
It is always good to get high-quality flour. To me, the difference is noticeable.
I cannot get enough of this beautiful colour!
You can sift the flour for extra fluffiness.
I am always very careful with baking powder or baking soda. You want it to work, but not be detectable.
If you are using thick coconut cream, as I did, add some water to dilute it.
Fresh, organic eggs are the best!
A little bit if salt will balance out pumpkin’s natural sweetness without making your pancakes actually salty.
I always add a lot of cinnamon. I mean A LOT!
The perfect consistency.
So tasty!
INSTRUCTIONS:
Mix all dry ingredients carefully. I use a whisk to do it.
Mix all wet ingredients, blend if you want your pancakes a little more puffy and airy.
Mix two parts together and fry.
Yep, they are that easy and absolutely delicious.

A while ago, I was invited to sample a Gymboree music class together with Julek. I have to confess, we do not attend many classes. I think it is absolutely wonderful there are so many different options out there and I do think they can benefit both children and parents, especially in such a culturally rich place. With so many expats around, some of whom have had their children before having a chance to establish strong, meaningful connections with other adults, they are certainly a great opportunity to meet other parents for support and advice, and children of similar age to yours for future playdates. Why don’t we go to those classes then? Several reasons, I suppose, but first and foremost, we are simply not the type. My son proves to me every single day how similar we are. He is just as hyper, just as strong-willed and just as stubborn as I am. He enjoys some parts of organised classes, but not all of them. He starts off with being a bit too shy to follow instructions in front of strangers, then joins in nicely, just to end up disrupting the class slightly by not being able to focus for long enough. This is how it has always been, it is just his charm. My confession on the subject is that I never persevered or pushed any class. I think we just work better doing things on our own terms, following our instincts. Of course being a designer and organising art workshops myself, it is very easy for me to make sure he is learning about art and music early on. We do a lot of creative activities at home I know other parents cannot provide. I also fully recognise that I am not able to teach him everything and at some point, when he is a little more patient, I will gladly send him to any class he will desire, but so far he still is not consistent enough to do so without adding stress to our routine. Now, having said that, I know plenty of parents, who love such classes and many babies and toddlers, who adore attending them and benefit from them greatly.
INTRUDUCTION TO GYMBOREE
I was really curious about the class, especially after hearing the story of her Gymboree adventure from Pa0la, who runs the Luxembourg branch. It was quite fascinating to hear about the full depth of the Gymboree philosophy and their many different endeavours.
On our first Saturday, we arrived to the class slightly earlier to have a little nosy around. The first room is a playground for babies and toddlers, which is (quite geniously) regularly rearranged. Julek was very pleasantly surprised the first time we arrived there and ever so delighted, when he noticed the room was completely different the next time we came! He is at the top spectrum of the size suitability of the playground (my bog boy!), so I can only imagine how much fun it is for the little ones. It is pure joy to watch them run around, climb and discover the play area.
On my side, I loved it. Everyone was extremely nice and helpful, the space was freshly decorated and spotless, and everything in it nicely designed, with consistent colour scheme and top-quality finish. Oops, I cannot switch off my inner designer, so I pay constant attention to visual details.

MUSIC CLASS
The class we attended took place in a separate room, to Julek’s momentary despair, since it meant moving away from the climbing planks and slides. He is such a playground type! In spite of his initial reservations, however, he actually got very much into it after a while, which was wonderful to watch. The class itself was made of few sections, but everything felt natural and fluid. The teacher was an absolute sweetheart and had a great contact with the children. No one was pushed to participate, so at different times, different participants were enjoying a short time out. The whole class seemed quite familiar to me, actually. When I was growing up, every kindergarten had a class of rhythmics, preparing us to proper music classes later on at school. This class, to me, was a perfect rhythmics class. The participants were gently encouraged to tap, bang and walk in the rhythm of music, sing simple songs and easier parts of longer lyrics. Some parts were repeated from one class to another, some were new. Julek, of course, enjoyed more physical parts of the programme the most, so dancing, clapping, moving around to the music, but he actually kept singing the opening and closing tune for quite a while! It was also a nice introduction to numerous simple instruments, the concept of choreography and really great to develop a general sense of rhythm.
To me, the class was surprisingly non-invasive. I am simply not wired to do cartoonish voices and jump around uncontrollably, unapologetically in touch with my inner child. I love spending time with children, but I prefer to talk to them and play as a usual me, so you can imagine my relief when I found out that there were no silly faces involved. An incredibly important part to me, was the fact that the class was taught to real music. By real music, I mean REAL MUSIC! Again, I have surprisingly (or perhaps not so surprising, after all) tolerance to squeaky voices and infantile lyrics, and I know for a fact many other parents do, too. I know things will change in coming years and Julek will choose his own favourite tracks soon enough, but I do believe exposing children to good music, visual arts and generally mindful way of living, pays off. Even children’s song were arranged in the 50’s-60’s style, we also danced to the Beatles’ “Mr Postman”. How refreshingly delightful!

CONCLUSION
I honestly think it is a wonderful space to join. I am fully aware that not everyone is as creative as I am, and they cannot be expected to provide all aspects of musical and visual development their babies and toddlers need. This is why I enjoy running my workshops for other children and this is exactly why I am so happy to see high-quality classes, such as Gymboree, available in Luxembourg. I was really taken with how detailed their operation is. The staff work as a true team, the visuals and design are top-notch and everything has its reason, time and place. Pure bliss!
PRACTICAL POINTS
The Gymboree site is suitable for children from 0 to 5 years old.
It is paid on a monthly basis, you just need to sign up for a minimum of 2 months, so 8 classes. If the length of the enrolment is longer, different packages and promotions will be offered to you. Also, if you are not ready to commit on a weekly basis, there is a 10-pass card, which is valid for 6 months.
Open Gym is offered to all active members. It means that you can use the site as an indoor play area during two three-hour sessions a week!
Main language used in classes is English but teachers are also able to communicate in French while running the class.
There are special classes and camps during school, to keep the little ones busy during their time off.

When I was asked to prepare a recipe that could be packed in a lunchbox, it had to be falafel. I made it for my son to take to his nursery for two years and he loves it! There are plenty of recipes out there of course, but I came up with my own to suit my son’s preferences. He likes his falafel quite soft inside, with carrots, sweet peas and spinach (also known as “flowers”). Also, they cannot be spicy, but still full of flavour. Here is what I came up with.
INGREDIENTS:
2 cups dry chickpeas
3 medium carrots
1 medium onion
2 slices of fennel
handful of young spinach leaves (can be frozen)
as much sweet peas as you want (can be frozen)
few slices of red peppers (optional)
1-2 garlic cloves
2 tablespoon sesame seeds
olive oil
pinch of cumin
salt and pepper
fresh coriander
ground maize (can be replaced with breadcrumbs or ground almonds)
ground hazelnuts (can be replaced with breadcrumbs or ground almonds)
potatoes
cucumber
plain yogurt
chives
Roasting vegetables makes them soft, but moist. It is a great way to prepare them for further use.
Play around with different sorts onions, they are really different!
Bio carrots are much sweeter and aromatic than others. Delicious!
I LOVE these peppers. They are less sweet than ordinary ones, but have much more flavour.
These potatoes, we actually grew with my son on ur balcony. So easy!
Mmmmmmm!
Nothing makes a dish like fresh herbs.
Make sure you do not over blend your falafel mix. You do not want to miss out on this wonderful texture.
Create your own mix to replace breadcrumbs. I always ass hazelnuts to mine for an amazing flavour of pan-fried nuts.

You can also replace chives with dill.
INSTRUCTIONS:
Cook the chickpeas for at least half on hour (preferably about an hour).
While the chickpeas is cooking, prepare carrots, peppers, onion, fennel and garlic, lay out in a baking dish with olive oil. Add some spices if you want and roast in the oven for as long as you are cooking the chickpeas, so for 30-60 minutes.
Drain the chickpeas leaving a bit of water inside and blend it. It will not feel fully cooked, but to is normal at this stage.
When the chickpeas is extremely fine, only then add the rest of vegetables and coriander, and blend until you can see small pieces of vegetables in the blender. Do not over blend, the texture is much nicer when you can distinguish pieces of vegetables and herbs.
If the mixture feels too dry, add some oil or water (or both). It should be soft and quite sticky.
Heat up a generous amount of olive oil on a large and flat frying pan. Mix maize and hazelnut on a plate, roll a small falafel in you hands, cover it with the crumb mixture and fry until golden and crispy. Roll occasionally to make sure they are crispy on all sides.
While you are frying your falafel, boil and drain the potatoes.
Finish the dish with thinly slicing the cucumber with yogurt and chopped chives stirred thoroughly through it. You can add a pinch of salt and black pepper as well and if you like onions, chop a small piece very finely and add to your salad.
If you are taking your lunch to work, pack in separate compartments.

Falafel with Young Potatoes and Chives Cucumber Salad When I was asked to prepare a recipe that could be packed in a lunchbox, it had to be falafel.
This month, I got a culinary challenge to prepare a dish worthy a training Olympian in Rio. A while ago, I had a pleasure of meeting a great athlete Yonas Kinde, who resides in Luxembourg and was a part of the first Official Olympic Team. Since Yonas is Ethiopian, I decided that it should be a fusion between Ethiopian and Luxembourgish cuisines. I researched Ethiopian dishes in search for something that would be full of flavour, but also relatively easy and made from ingredient available locally. I chose yekik alicha, turmeric yellow split peas, which is surprisingly easy to make (although it takes some time to get right) and insanely delicious.
INGREDIENTS:
1 portion pasta (any kind you like)
1 glass yellow split peas (dried)
2 large yellow onions
1 red sweet peppers
few generous handfuls green beans
few handfuls young spinach
some rucola
leek sprouts
coriander
2 teaspoons turmeric
thyme (dried)
1 clove garlic (puréed or chopped really finely)
1 table spoon ginger (puréed or chopped really finely)
olive oil
coarse salt
coarse black pepper
INSTRUCTIONS:
Cook the split peas in three times the volume of water for about 20 minutes and let it sit in the hot water for another 30 minutes. The peas will not be soft and mashy at this time yet, but almost all the water will be absorbed.
Meanwhile, cook pasta according to instructions on the package and drain.
Cook green beans for about 10 minutes, until sweetish and just a little bit crunchy.
Heat some olive oil and fry finely chopped onions on low heat until nice and brown.
Add peppers, garlic, ginger and turmeric to the onions, fry everything for few more minutes, then add the peas. Fry altogether for another few minutes, until it is all evenly mixed and nicely fragrant.
Add about three times the volume of water to the pan again, bring to boil and let simmer for 45 minutes. Stir occasionally. This is when the peas gets soft and smooth.
When all water is absorbed and the peas is nicely mushy, add salt and pepper to taste and handful of coarsely chopped coriander. Mix.
On hot olive oil fry thyme for few seconds. Be careful not to burn it! Throw the cooked beans on the pan and mixed thoroughly. Fry on high heat for about 2 minutes.
On the same pan with a little thyme remaining after the beans, fry spinach for a minute or two and when it is dark and soft, take it off the heat, add pasta and coarse salt. At the end, add a handful of finally chopped rucola. It will add flavour. Gently mix.
This is it! The food is now ready. Arrange on a plate and garnish the peas with sprouts of your choice. Leek sprouts are rather strong in flavour, use other kind, if you prefer something milder. Sunflower sprouts are delicious and incredibly easy to grow yourself, so they could be a great option here.

There is so many great smoothie recipes out there, but this time I wanted to turn a classic dessert into a smoothie to satisfy my sweet tooth. This recipe is easy and so quick. A perfect end to a summer lunch.
INGREDIENTS:
SMOOTHIE:
1 apple
1 pear
1/2 banana
200-220 ml water
1 handful oats
cinnamon
CRUMBLE:
crushed nuts of your choice
handful oats (large flakes)
1 tablespoon honey
cinnamon
Delhaize Bio Range
Make sure pears are ripe, otherwise the smoothie will not be sweet enough.
Add as much cinnamon as you like. I make sure to use plenty!
I always buy peanuts in shells, otherwise I find them too dry.
Crushing the nuts yourself unlocks so much flavour!
The smell of this honey and cinnamon mixture is amazing!
Do not make nuts too small.
Delhaize Bio oats have a lovely creamy consistency, without losing the texture.
Look for oats with large, but thin flakes.
Make it as thick or as thin as you wish, by adjusting the amount of water in the recipe.
Always make more of the crumble, in case you come back to “taste” few times too many.
Finished smoothie is just as lovely as it is delicious.

INSTRUCTIONS:
Make a smoothie by blending all ingredients together. Start from adding 200 ml water and if you find the smoothie too thick, add some more.
To make this lovely crumble, shell the nuts of your choice and break them up. You can of course use pre-shelled, or even crushed nuts, but they are not as full of flavour and aromatic, so if you have a moment to do it yourself, it is definitely worth it.
Put a small pot on a low heat and start roasting nuts first. I like using peanuts and pistachios, but feel free to use whatever nuts you like. When they are already a little bit brown, oats and soon after honey. Wait with the cinnamon until the honey has melted entirely, it is much easier to perfectly blend it in then.
Stir until the nuts are perfectly coated, without any leftover honey. Cool down for few minutes and sprinkle on your smoothie. Decorate with a leaf of fresh mint.
