Low Calorie Meal Prep
So I know this isn’t low calorie to some of y’all, but I’m doing a halfway recovery right now so this works for me. It’s only 243 calories for a pretty big serving.
Ingredients
3 large chicken breasts, cut in half lengthwise
Frozen Broccoli (I did half a large bag)
2 medium sweet potatoes
Tablespoon of olive oil
Salt
Pepper
Oregano
Garlic powder
Recipe
Preheat oven to 425 degrees Fahrenheit.
Spray a baking sheet with zero-calorie cooking spray. Place the chicken on it, making sure none of them touch. Sprinkle heavily with salt. Top with some pepper and dried oregano to taste. Bake for 15-18 minutes.
Wash sweet potatoes, then cut into chunks, about an inch. Line a baking sheet with parchment paper and place the potatoes on it. Drizzle with olive oil and stir. Sprinkle with salt, pepper, and garlic powder. Stir again.
Once you take the chicken out, turn oven down to 400 degrees. Put potatoes in, baking for 30 minutes, stirring halfway.
Cook broccoli to instructions.
Meal prep
I cut a piece of chicken into bite size pieces, about 3/4 cup of broccoli, and a large helping of sweet potatoes in each container. I salted the broccoli in each container, however you should season to your preferences.
It fills up a lunchbox sized Tupperware. It’s a pretty large meal for the calories.
