Even as a toddler, I would want to eat the head and tail of the fish. It's always been my favourite. Truth be told, my first time in a maach'er bajar was when I'd already turned 18. It is astoundingly impressive to see the seasonal variety of fish in these local bajars. The vendors sitting proudly and singing praises of their stock for the day. You can't just walk in and expect to see filleted fish. Some members of our family would only buy the maach if it was still alive at the bajar. That's what fresh meant. And visiting the bajar was always an every day activity. Mindfully observing and selecting seasonal produce to cook for the day. It brings me such joy to see these bajars still flourish and not be overtaken by the pretty packaging of supermarkets. Eating like this has its own joy and magic. It's possibly why I visit a fresh market every city I travel to, so that I can rekindle this feeling.
