I love it when the scores on the loaves imperfectly sway, pull away and stretch. While I am obsessed with perfection (which some times is to my detriment) the process of baking by hand is an endless sea of metaphors, about the beauty of imperfection, the amazing potential of mediation, the love, hard work and care that goes into producing something that is now an extension of you, a snapshot of who you are, how you are feeling, your hopes, dreams and anxieties all encompassed in a gluten cloak. 25 days later a half gallon of lemon pickle is ready. Came out almost as good as my moms. Really stoked to bring it out for Chefsweek. Shout out to @pleezwatchthatchild for taking care of this baby while I was gone.
