Natural designs embodied in Mojave Desert plants fascinated Eames, who liked to mount them on the wall of his studio. From them, he said, he would get inspiration for his own designs. The eames studio was fitted with a 22’ long tack board for such specimens and other experimental designs.

自然薯の海苔揚げ

昨年末に恩師の所を訪ねた折「なんか旨いもんを作ってみぃ！」と凄まれ、奥様了解のもと冷蔵庫をまさぐり発見した自然薯でこしらえたのがこれです。

ひとつつまむともうおしまい、止まらなくなります。

自然薯

自然薯を丹念にすりこみます。

海苔

それを切り分けた海苔ではさみこみまして、

揚げる

ポイポイ油に投入して色よく揚げるだけです。

「自然薯」といいましたが何もそれにこだわる必要はなく、この日も自然薯が切れたのでなんでも北海道からドッサリ送られてきたという「長芋」をすって揚げています。

長芋の場合はトロミが少なく、海苔で挟んでもスリ落ちてしまいますので、片栗粉を混ぜ込んでやや固くし、海苔で挟むようにします。

オイは立て続けにムニムニ挟んで揚げていきましたが、見た目にこだわるならば、海苔のサイズを揃え、自然薯を丁寧に海苔でローリングしてから揚げると美しくソソられる姿になります。

そうそう、揚げあがりは器に盛り、塩をパラリと振ってください。

山芋系だったらなんでも使えます。

ホントは胡麻油で揚げると旨いんですけどね。
