Sweet Potato Pecan Cinnamon Rolls

Recipe Ingredients: 4 medium sweet potatoes 2 tbsp olive oil ½ tsp smoked paprika 3 rosemary twigs ¼ tsp sea salt ¼ tsp black peppercorns (or ground pepper) ½ sliced red chili & sesame seeds for garnish (optional). . Directions: 1. Preheat the oven to 200C (180C fan). 2. Clean the potatoes. Using a sharp knife, make vertical slits in the potato three quarters of the way down, about 3mm apart. Repeat for all the potatoes and place them on a baking tray. 3. Take off the leaves of 1 rosemary twig & place them in the mortar & pestle with sea salt & peppercorns. Grind it together until it resembles paste consistency. Add paprika & olive oil and muddle together until well combined. 4. Using a pastry brush, brush the paste over each potato. 5. Stuff the remaining rosemary twigs into the slits of potatoes. 6. Bake in the oven for 45-50 minutes until the flesh is soft. 7. Garnish with slices of red chili & sesame seeds. Enjoy! #letscookvegan
