my thoughts on the good omens finale (SPOILERS):

i don't think there was another solution for them. even if god had brought back THEIR reality, it wouldn't solve the crux of the problem: humans would not be free till there is no heaven or hell.

i think aziraphale and crowley understood this, even if they brought back their reality they would have had to bring down all the celestial system, they are no exception.

aziraphale and crowley are part of the system by definition that prevents humanity from being free.

it's part of their tragedy; they fell in love with earthly desires, humans and each other and tried desperately to make it work but they couldn't and they can't.

yes those aren't aziraphale and crowley but aziraphale and crowley let go of their love for each other and humanity to give them a chance.
