What is your favourite tea brewing style? Gong-fu, classic infusion, cold brew, chai teas? ⢠While each is unique, they are similar in that they both demand the right steeping time and care. Neither style rushes the brewing of the tea. Where they differ is in how the tea actually tastes. Rujani Tea can be steeped in all the different styles. We have a preference for the Gong-fu style as it allows us to stop and appreciate the tea in its entirety. "If the plants are doing well, I am happy. If they are not, I do get upset," says Raj / @rajbarooah Rujaniās founder. His first stop in the tea farm is always the section where the youngest plants are growingā ā¢ā We are currently propagating purple tea plants in the nursery, and Raj stops to see how they are doing, whenever he is doing his rounds of the farm. āYouāre always concerned about the youngest,ā Raj says. āI visit them often and see each young plant individually," just as if they were his babies. ā ā¢ā This sustained care for our land, the people and the plants that make our small business is paramount to Raj and everyone at Rujani Tea. Who loves an infusion? Infusions are quite simply put, teas blended with flavours and additives. They have caught the imagination of tea blenders since time immemorialā ā¢ā Think the ever-popular Earl Grey, credited to being a gift of the European royalty, even before the tea plant was discovered by the British tea industry. During that era, oils and other flavouring agents used to infuse or blend tea with, were wholly natural. Today most flavours are artificial or synthetic, termed as ānature-identical" (or NI) flavoursā ā¢ā The quality of tea to make an infusion need not be excellent. The added flavouring will almost always cover up for any deficiencies of the actual tea. So any mediocre tea can work to make an infusionā ā¢ā While we make a few infusions of our own, we use natural and organic additives. Our Earl Grey is made with bergamot oil sourced from France. The Rujani Rose Green (Pic 1) is blended with organic rose petals sourced in Melbourneā ā¢ā At Rujani, we are all about and always recommend a straight or "real tea" (Pic 2).
