Forgot to post this recipe for infused Burmese Chicken Soup from a week ago (oops 😋) I hate sweet potatoes but this recipe made me come around. It's the ultimate comfort food. Give the recipe a whirl while you are stuck in quarantine 😃
1 bunch chopped cilantro
Lime Juice
1 can coconut milk, unsweetened
1 lb cubed chicken thighs
2 cups chicken broth
2 sweet potatoes
Himalayan sea salt
Red pepper flakes
Ground Coriander
Tumeric
Ground ginger
1 diced Shallot
Minced ginger
3-6 garlic cloves
1 Tbsp infused avocado oil
Medium heat sautee garlic, ginger, and shallot in infused oil. Add spices and salt. Lower heat and add sweet potatoes.
Add 1/2 c of broth to deglaze. Add rest of broth, chicken & coconut milk. Cover and simmer for at least 30 minutes.
Add lime juice and cilantro (save some for garnish). 6-8 servings
