Watermelon Feta Salsa
Just came for the salsa.
I live in the land of salmon and cedar. Good salmon - Sockeye or Coho does not need any gimmicky cedar. Just lay it on a piece of foil (lubricated with a wee bit of avocado oil)... give it a light sprinkle of sea salt and a short squeeze of lemon. And please cook it lightly - less than you think it needs. Don’t turn it over.
But do add the salsa.
Save the cedar for the pinks... or for fire starter later in the evening.
By the way - if you can’t catch your own and you want to avoid farmed or GMO frankenfish buy the sockeye. They haven’t figured out how to do that yet. Sockeye live in a freshwater lake connected to their birth stream for a full year before they even begin their venture to the sea. Fish farmers don’t have the time or patience.
