Fig season is here!
Papaya Tree Update. Now seven months old
just a quick update on the papaya Tree. We had a hard frost in South Texas and even though I wrapped the 13’ papaya Tree in sheets, the frost killed the tree and rotted all 22 papayas. Very dissapointing to lose all that wonderful fruit.
Cherry tomatoes jump on the season
Raised bed trellis and predator frame built from palm tree cuttings and bird netting. Squirrels are terrible here and eat all seeds planted before they germinate and any new germinated plant. Bird netting is the only success I've had to grow veggies on the homestead

I love smoked meats! When it comes to Thanksgiving, there’s nothing like turkey. Follow my simple method for creating a succulent, juicy smoked bird every time. Whether you bake, barbecue or fry your bird, the secret is brining. (Brine, Cook, Rest, Carve & Serve)
Brine for at least 24 hours and always use a meat thermometer to ensure proper temperature.
Brine
2 bottles of sparkling cider, 2 cups brown sugar, 2 cups Celtic sea salt. Add water to completely cover turkey in brining vessel such as a food grade 5 gallon bucket.
Cook
Smear 4 table spoons of room temperature butter under the turkey breasts, then cook low & slow until the internal temp reaches 155-160. Best method is to use a meat thermometer with a cable to continually monitor the temperature of the meat.
Rest
Let the turkey rest for 20 minutes covering with aluminum foil or in an enclosed vessel.
Carve & Serve
Consider removing the turkey breast as a whole piece and then slice against the grain with the skin on. Separate wings, thigh and legs and serve on a platter with your favorite gravy.
