Fried Tomatillo Sandwich with Egg and Spicy Mayo
Per sandwich:
two slices of good bread
4 pieces of breaded and fried tomatillos, room temp
1 boiled egg, room temp
extra virgin olive oil
small handful of shredded kale
few thin slices onion
cornichon to serve
Spicy Mayo
¼ cup mayo
¼ teaspoon of hot sauce
¼ teaspoon of cayenne pepper
1 teaspoon of fresh lemon juice
1 tablespoon of finely chopped cilantro
salt and pepper to taste
I couldn’t help myself. I had to do one more tomatillo recipe. I had some left over fried tomatillos, and a sandwich felt necessary…naturally.
In a bowl, mix together all the ingredients for the spicy mayo. Taste, and adjust flavor if needed. Set aside.
Peel and slice the boiled egg. Season with some salt and pepper and a drizzle of olive oil. Season the kale as well.
Toast the bread. Once toasted, assemble! Spread spicy mayo on both slices. About a spoonful on each slice. Add the fried tomatillo, the egg, kale, then onions. Add the top slice and gently press down on the sandwich with your hands. Serve with some cornichons and enjoy!
