BBQ Sauce
If you like PINA COLADAS...learn to make it
1 cup white rum
1 1/2 cups coconut milk
1 1/2 cups pineapple juice
1/2 cup diced fresh pineapple
1/2 cup whipping cream
6 cups crushed ice
4 wedges fresh pineapple (garnish)
Directions
Blend all ingredients except the pineapple wedges.
Serve in 4 tall glasses over crushed ice and garnish with pineapple wedges or any fruit you like.

Baked Custard
1 tin of condensed milk
3/4 cup of evaporated milk
3 eggs
1 tsp of sugar
1 tsp vanilla
1 tsp of grated ginger
Method
Beat eggs and combine all ingredients together in a bowl.
Mix together. Pour in a round glass dish.
Bake at 350 F for about 40 minutes or until inserted knife comes out clean. Cut into slices and serve. Enjoy!

Cranberry water is better for you than the normal bottled water.
Cranberry Juice is better than Cranberry water because it is made from 100% cranberries..no added sugar or preservatives.
Parents usually give their toddlers Welches thinking it is healthier for them when it could actually be the opposite. Welches has an ingredient in it called Corn Syrup which is a sweetener and could do more harm than good.
Many people might not be aware of this but Trujuice Orange Juice is actually better to consume when it has the white label. The white label usually comes on the bottles when oranges are in season. The white label indicates that it is made from 100% freshly squeezed oranges while the range label means it is made from citric concentrate when oranges are not available.
Coconut Water is a healthier alternative to all of these as the only ingredient is coconut water.
Another alternative is picking the fruits and making all natural juices for yourselves and I will give you the 'How To' in subsequent posts

It is not uncommon for persons to go shopping and just buy things without reading the facts about the products they are purchasing. Often times the things we buy under the 'label' of natural are actually the opposite and are very hazardous to our health. These pictures will show some popular 'fruit' drinks and juices that many persons think are good but the facts say otherwise...
LABELS are NOT DECORATIONS
This post will not be the regular recipe posts but serves to educate fellow 'Tumblites'. I promise you will pay more attention to details on your next trip to the supermarket
Jamaican National Dish
Ingredients
2 dozen ackees, or 2 20oz cans ackee 1 tsp salt 1/2 lb saltfish (salted cod) 1/4 cup coconut or vegetable oil 2 medium tomatoes, chopped 1 sweet pepper (bell pepper) chopped 1 large onion, chopped or in rings 2 cloves garlic, minced 1 hot pepper, diced (optional) 1/4 tsp ground pimento (allspice) or a few whole pimento grains black pepper
If using canned ackees, there is no need to boil them. Simply drain off the liquid.Remove ackees from pods. Clean, wash and drain. Place ackees in boiling water (enough water to cover ackees) with salt, and boil for about 15 minutes or until tender. Drain and set aside.
Wash saltfish thoroughly. Place in a pot with enough cold water to cover saltfish. Boil uncovered for 15 minutes. Throw off the water. When cool enough, separate the saltfish into small pieces, discarding skin and bones. If fish tastes too salty, wash it again.
Heat the oil over medium heat and add tomatoes, sweet pepper, onion, hot pepper, garlic and pimento. Add saltfish and ackee, and stir lightly. Heat thoroughly, especially if using canned or frozen ackees. Add black pepper to taste.
Variation: Use crispy bite sized pieces of bacon or corned pork as a substitute for, or in addition to saltfish.
You can be flexible with this ackee and saltfish recipe. Use whatever vegetables and seasonings you have on hand, that you think might go well with the two main ingredients.
Serve with boiled green bananas, dumplings (fried or boiled), roast breadfruit, bammy, bread, white rice, Rice and Peas...almost anything is good. Enjoy your meal!

Ackee Facts
Scientifically named in honour of Captain Bligh who brought it from Jamaica to England (Blighia) and for its savoury taste (sapida).
Ackee was brought here by enslaved West Africans. The first evidence of ackee growing in Jamaica was found in the 1700s.
The ackee tree grows eight to fifteen metres tall. It flowers biannually, occasionally more often.
The fruit of the ackee is not edible in its entirety, only the inner, fleshy yellow arils are consumed.
The presence of of hypoglycine A in the immature and over-mature fruit is found in ackee and this makes it poisonous at certain stages in its development, this is why Jamaicans believe that ackee must open naturally to avoid the toxicity.
It is widely consumed in Jamaica and Jamaicans are among the only people who eat it.
Although it is said to be mostly consumed by Jamaicans, Ackee is eaten in other Caribbean islands such as Haiti and Cuba.
If you go to Barbados and ask for Ackee, what you will get is known as Guinep in Jamaica so be sure you know this guys.
Ackee is the national fruit of Jamaica and one-half of the national dish, ackee and saltfish. Though Ackee and Saltfish is the most popular dish made from the ackee, it is also combined with callaloo and corned pork, mackerel, bacon or beef for other dishes.

Ackee
This following post will feature the the fruit Ackee (some people think it's a vegetable because it is cooked but it is actually a fruit). I will give a brief history on the fruit, its origin and how it was brought to the Caribbean and the different names it is known by across the region. In another post I will show how to prepare the Jamaican National Dish (Ackee and saltfish) and will also give the recipe.
Mango Drink Shake
This is an easy to do recipe, it takes approximately two minutes and is a healthier alternative to bottled soda and most importantly you can get the main ingredient right in your backyard.
What You'll need:
1 cup vodka 1/2 cup lemon juice 2 cups pineapple juice 2 mangos 1 tbspsuperfine sugar
How to do it:
Throw all the ingredients into a blender and blend 'til it's nice and smoooth. Pour into cocktail glasses then add ice and a lemon wedge or strawberry garnish.You can add the ice with the other ingredients if you prefer it to be chilled right away.
