This recipe for chicken and dumplings, a Paleo take on a comforting classic, is dairy- and grain-free and loaded with healthy ingredients.
Ingredients: 1 lb chicken breasts, diced. 4 cups chicken broth. 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup arrowroot powder. 2 eggs. 1/4 cup coconut milk. 2 carrots, diced. 2 celery stalks, diced. 1 onion, diced. 2 garlic cloves, minced. 2 tbsp olive oil. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: In a bowl, mix almond flour, coconut flour, arrowroot powder, eggs, and coconut milk to form dough. Roll dough into small balls to make dumplings. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, celery, and garlic. Saut until vegetables are tender. Add diced chicken to the pot and cook until browned. Pour in chicken broth and season with dried thyme, dried rosemary, salt, and pepper. Bring to a simmer and add dumplings to the pot. Cook for 15-20 minutes until dumplings are cooked through and chicken is tender. Serve hot and enjoy!
