Tonight's dinner:

Homemade dinner:
* bacalao guisado (codfish stew) made with codfish, sofrito, onion, garlic, bell peppers, fresh tomatoes, tomato paste, potatoes and adobo seasoning
* white rice
* platano maduro (fried sweet plantain)
* potato salad made with potatoes, mayo, sour cream, onion, bell pepper, tomatoes, celery, bread & butter pickles, hard boil eggs, smoked ham, adobo seadoning and paprika
Simple protein packed sandwich for lunch:
Surimi (aka imitation crab meat), canned tuna, mayo & bread & butter pickle on a fire-grilled buttered tortilla
Sunday night homemade meal is a fusion of various ethnic culture I grew up with:
* grilled chicken tandoori with Greek style tzatziki sauce
* Puerto-Rican style potato salad
* Cuban-style rice with smoked ham and culantro
Made a yogurt parfait for lunch with fresh strawberries, blueberries, banana, Greek yogurt, honey & homemade strawberry jam. Only thing missing & couldn't find in the supermarket was was granola.
I wanted to create it in a glass cup to look all classy before eating it, but settle for a bowl since it was quick & convenient to do. I noticed in the pic it was topped with shredded coconut. I didn't think of adding it when I was making the dish.
Tuesday night homecooked meal:
* Moro (black bean & rice casserole) - added to enhance flavor: kabocha squash (pumpkin), chorizo, culantro leaves
Bacalaito (cod fish fritter) - added to batter to enhance flavor: onion, scallion, bell peppers, garlic, cilantro, culantro
Monday night homemade dinner:
* white rice with Puerto Rican style corned beef
* buttered corn, string beans
* plátano maduro (fried sweet plantain)
* diced pear avocado (latin-caribbean avocado)
So much hype over this Popeye's chicken sandwich. One sandwich is Popeye's original classic flavor, the other has a spicy kick to. These sandwiches are huge and the chicken's crust texture is very crispy. The sandwich comes with brioche bun, 2 very large kosher pickle (that taste delicious) and mayo. I requested cheese and tomato, but was told it only has mayo & pickles. To me, the sandwich taste good, but it didn't give me a wow factor. I really do like and am dissapointed this sandwich does not have cheese & tomatoes, as an option.
Sunday homemade dinner:
* chicharron de pollo (chicken crackling)
* arroz con gandules (rice with pigeon peas)
* platano maduro (fried sweet plantain)
* broccoli with cheddar cheese sauce
Homemade flancocho with chocolate cake base
homemade dinner:
Empanada, moro and macaroni salad
with a hi-protein semi-Greek salad made with:
lettuce, tomatoes, onion, bell peppers, cucumber, black olives, hard boiled eggs, cheddar cheese, broccoli and dolmas (stuffed grape leaves)
Homemade pepperoni & sausage pizza.
The edge of the crust has a garlic basil butter & fontina filling, then folded over itself.
I made an easy no-cooked pizza sauce and use 3 types of cheeses topping:
* fontina
* mozzarella
* munster cheese (brings the flavor up a notch)
Also topped with onion, bell peppers, black olives & tomatoes
There is a fruit & vegetable stand I went to buy tomatoes and noticed this fruit that looks like a hairy strawberry. I was intimidated to eat anything that has a mutant bean sprout strawberry looking appearance.
I asked what is it and what does it taste like. I was told it is rambutan & taste like lychee. I asked if I can take one to try at home.
I sliced it open & notice it look very similar to a quenepa known in English as genip. It tasted similar to a very mild flavored grape. Personally, a grape taste better than rambutan. Overall, I wasn't impressed by its flavor, nor would I buy any rambuten.
Homecooked meal... to add corn or not...
