I submit for my fellow low spoons people: The Humble Quesadilla! I'm an indigenous Southern Californian so this is kind of a stereotype food for me, but if you haven't made many of these: We put the precooked flour or corn tortilla in pan or on the hotplate griddle thing we have got, right? (if using corn add a smidge of mild tasting cooking oil of your choice to the pan first for some extra crisp)
Then we add our suitable cheese. (You want some that melts well. Not all cheese is created equal- I am a basic babe and go with "Mexican 4 cheese" packaged blend) and put the second tortilla on top.
Turn on the heat. Then while it's all getting warmer, we use the flat flipper utensil of choice to marshal our cheese bits so they're in the tortillas and not sticking out on the pan surface. We don't wanna make a mess. I dunno about you but my pan hates melted burny cheese bits.
Wait a while. You can check the melt by lifting the edge of the top tortilla with the spatula flipper. When it seems the cheese, is melted, we flip. Toasted side should have some nice browning bits. Second time, we wait not as long as the first time, maybe a minute, then we flip out onto plate. Let it cool a little, and then you gotta cut it into triangles to eat it- tradition. Or just pick it up like a hungry goblin, Nom nom nom.
Add other stuff if you wanna get fancy. You could smear some salsa of your choice in there for more spice, add in some leftover cooked chicken or beef or whatever, or sliced avocado if you are favored by the ancestors and blessed with such a bounty, but first thing in the morning this pico does not gallo, so I just add a lil salt and pepper. The pan is now hot enough to do eggs as a side.

The sky was already drizzling at 7am as I woke from my slumber to a wet weekend morning. Told mum last night not to buy my breakfast so I went back to McDonald’s Singapore for the limited time Mighty McMuffin 🍔. I preferred to buy the food myself rather than to pay extra to order delivery. Treat the 20-25 minutes’ walk both ways as a form of exercise to burn off some calories.
I am glad to catch the Mighty McMuffin Meal (S$7.95) one last time as it had already been taken off the menu while I am writing this post. The chewy muffin buns sandwiching two savoury rashers of crunchy chicken bacon 🥓, as the chicken sausage patty adds a meaty depth while the egg 🍳 and cheese 🧀 complement with their creaminess. The sweet maple BBQ sauce ties everything together, giving your taste buds a morning treat that’s both hearty and indulgent. Downed the satisfying burger and Hash Browns with a cup of hot Latte ☕ which I topped up S$1.20 to change from normal coffee.
I also grabbed an ala carte Breakfast Wrap Chicken Sausage (S$6) as the muffin is not filling enough for me. The wrap 🌯 came with fluffy, scrambled eggs 🥚 sandwiched between a slice of cheese 🧀 and a chicken sausage patty, topped with a crispy, golden hash brown, finished with tomato ketchup and wrapped in a hearty wholegrain tortilla.
Sis normally settles her own meal but when I am buying McDonald’s breakfast, she will always ask for Big Breakfast (S$6.30). I guess the lure of fluffy scrambled eggs, savoury chicken sausage, toasted wholegrain muffins and a golden hash brown is too much of a temptation for her. 😋
