Nut Butter Cookies/Cupcakes/Bread (gluten free, sugar free, later on candida friendly, grain free)
1 cup any kind of nut/seed butter
1 egg
vanilla extract
salt
1/2 tsp baking soda (ish, maybe a little less?)
Preheat oven to 350 degress.
Mix all of the ingredients together.
If you're doing cookies, cook them on parchment paper. For cupcakes or bread, I would probably grease everything well so it doesn't stick, or use some kind of liner.
Optional: for cookies, you can criss-cross the top with a fork and sprinkle sea salt, cocoa, cinnamon, etc. on top :)
Bake for 10-12 minutes for cookies, probably longer for bread/cupcakes (just check every so often).
So this is a really versatile recipe - I used it for cookies, but they came out like muffin tops, so I believe that they would actually do really well as cupcakes or some kind of sweet bread. Mini-cupcakes would actually probably be the best for this batter, I think! This recipe made about 9 cookies that were a couple of inches across.
