Happy #Easter!! I’ve been preparing for Easter #celebrations for weeks and it is finally here. #Azaleas 🌺 are in full #bloom, the sky is super blue, and my #chickens are producing the most delectable #eggs. What a great time of year to celebrate Jesus’ resurrection! I’ve already enjoyed making naturally dyed eggs with one of my daughters to get a blog post up, and am making them again tonight for hunting tomorrow. I’ve also been looking forward to playing #eggvignette along with some of my #favorite #instagramers, @happydaysfarm! Happy Easter everyone!!! Have a blessed day!

“He shall feed his flock like a shepherd: he shall gather the lambs with his arm, and carry them in his bosom, and shall gently lead those that are with young.” Isaiah 40:11 . . Upon taking this photo of this cow and her calf this weekend, I was reminded of a verse that got me through many challenging times with 7 young children. I still have a few young children now, though they are not babies and toddlers anymore. It meant and continues to mean so much to me that God knows my predicament as a mother of little ones. There are always situations in which you don’t know what to do. Knowing that God is leading me, especially in that l have young ones to look after, makes all the difference in the world. I feel very led today to share this with you, so whoever you are for which this is intended to reach...God is leading you. Have no doubts of that!! I love making one recipe that lends itself to so many variations depending on adding one ingredient! This vinaigrette is super easy, quick, goes with anything from taw vegetables and salad to sautéed greens, fish, and even brisket. Recipe below. Add 1/2 cup balsamic vinegar, juice of 1 lemon, 2 tablespoons olive oil, 2 tablespoons Alaga Cane Syrup, a pinch each of Kosher salt and freshly ground pepper. Mix very well and spoon over whatever seems good to you! Store in an airtight container in the refrigerator for 2 weeks. I add 4 cloves of garlic and Parmesan to give it a punch of flavor! You have to hear the back story on this truck! Scott and I started dating when I was 18. He’d come pick me up on this very trick. Once we got married and started having kids, he sold the # truck with much regret. He spoke of this #Chevy often...very often. I began my quest back in December to locate this beloved object of affection. I finally found it, and would you believe the new owner WOULD NOT sell it to me. I kept trying so for our anniversary he agreed to sell. It doesn’t quite look the same, but the inner workings are in tip top shape. I’m in the drivers seat taking the fam for a drive!! I ❤️#LOVE! Scott and I celebrated a milestone wedding anniversary!! We had a great evening, and I dared to try something new, which was fantastic I might add!! Little known to me, I have a food allergy to escargot! I was wheezing a little last night and mentioned that I was having asthma symptoms (I don’t have asthma, BTW). Upon awakening this morning, I found that I could only see a little light in one of my eyes! I looked in the mirror...and WOW! Well, I’m on a few meds and already doing much better!! So much better that I tested a recipe I’ve been writing for the past week!! One of the many advantages to living in the South is abundance of ferns and somewhat tropical 🌴 like plants.in the summer, the humidity stays for weeks on end at 90 percent. It can be somewhat hard to breathe, but the beauty surrounding me makes up for it!! Legend has it that a farmer created the orange variety of carrots for Prince William of Orange. He was a major player for the Dutch revolt that started the 80 years war. If you haven’t been on the page a while, you may not know that I do all my cooking on the weekends. I send food back to school with one of my sons for the week. This week, among many of the meals, I made Chicken Pot Pie. I didn’t want the crust to get soggy en route, so I made individual crusts where he’d be able to warm the rice and filling in the microwave and still have crunchy crust.
