Today I made Vietnamese spring rolls and homemade peanut sauce! I left out the lettuce leaf since my mom doesn't like lettuce, but maybe I should have kept it in since biting into them resulted in a lot of messy fillings pouring out ^^;

But as you can see, I made some with shrimp and some with teriyaki salmon, the salmon ones honestly didn't need any added sauce since the teriyaki marinade was flavorful enough. But yeah, they were a hit in my house. :D

The prep time honestly took longer than the actual assembly of the rolls, especially since I made both the teriyaki and peanut sauces from scratch.

Cold mung bean noodle soup! The broth is somen base + soy sauce + lemon juice + ground ginger + ice cold water.

Today I made Cod Roe Pie. Y'all, this is a labor of love and it tastes incredible.

This all started because I've been really into Stardew Valley and was fixated on Demetrius' "Have you tried my pollack roe pie? What? It's a type of egg" during the Egg Festival in your second year. Pollack roe is, alas, not easy to buy in my local area, but my Korean market DOES have sauce packets of Tarako, which is marinated cod roe. So I decided I would make a cod roe pie instead. Of course it cant be JUST cod roe pie, it needs a proper filling, so I followed a recipe for English cod fish pie, and I would merely add the tarako sauce packets to the filling. It took a lot of planning and a number of steps to put everything together, but the final result is fantastic. The tarako makes it taste like there's shrimp in it despite not having any in it. I'll put the list of ingredients and measurements below the cut, just on the chance this interests anyone. And if it does, then let me know if you'd like the full recipe and I'll post it.

Pie Filling:

1 diced fillet of cod fish

1 diced leek stalk (no leaves)

1 diced whole shallot

2 tbsp butter

2 cups heavycream

2½ tbsp cornstarch

⅓ cup shredded monterey jack cheese

¼ cup veggie stock

½ tsp salt

¼ tsp white pepper

1 tsp lemon juice

2 tbsp finely diced fresh parsley

½ tbsp dill

1 tsp chives

4 packets of cod roe

Mashed potato pie topping:

3 potatoes

2 tbsp butter

¼ cup of milk (although I think I should have used ½ cup, I piped the potato onto the pie filling in the casserole dish but it was kinda dense and started sinking into the filling)

1 cup shredded monterey jack cheese

1 tsp yellow mustard

1 tsp salt

Today i learned Tarako is, in fact, Pollock roe. The only problem is I used the wrong type of fish fillet. So This recipe is technically faithful to Stardew Valley had I used the right fish fillet.

Texture is a bit odd but the taste is fantastic. I think if i focused on turning the batte into a custard the texture wouldn't be so strange.

Despite my self-critique my family loves the pie! Here's a link to the recipe I was following if you're interested. (the only difference is I incorporated ½ a cup of the canned bean juice, and then replaced both the sugar and the evaporated milk with ¾ a cup of sweetened condensed milk and then added oatmilk until it reached a full 1 cup before adding it to the rest of the batter, so either scrap the sweetened condensed milk or scrap the oatmilk for regular milk, based on if you want to avoid dairy or prefer dairy. ALSO i replaced the all-purpose flour with tapioca flour to keep it gluten free for my celiac mom.)
