This creamy and flavorful hummus gets a vibrant twist with the addition of roasted red peppers. It's perfect as a dip, spread, or topping for sandwiches and wraps.
Ingredients: 1 can 15 oz chickpeas, drained and rinsed. 2 roasted red peppers, peeled and seeded. 3 tablespoons tahini. 2 cloves garlic, minced. 2 tablespoons lemon juice. 1 tablespoon olive oil. 1/2 teaspoon ground cumin. Salt and pepper to taste. Water, as needed for consistency.
Instructions: Put tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper in a food processor and add the chickpeas. Scrape down the sides of the bowl as needed to make the mixture smooth. To get the right consistency, add water one tablespoon at a time if the hummus is too thick. Check the seasoning and make changes if needed. Move the hummus to a bowl for serving. Sprinkle with extra cumin if you want, and drizzle with a little olive oil. You can eat it with crackers, pita bread, or fresh vegetables.
