So essentially I’m writing a COD MW FF. I’m Scottish and I have the BIGGEST urge to make Soap speak in pure Scots but I realise that might be a struggle for the audience.
Bottom Line: Should I make Soap speak pure Scots, just use some Scots words every now and then or not at all?

I too am a Scottish person.
MacTavish interacts solely with other non-Scottish, English speaking characters in canon, and during these interactions he speaks in English. I don’t encourage people to be slaves to canon, given that I frequently reject swathes of it when writing my stories, but whenever I see someone choosing to write MacTavish or MacMillan speaking in Scots to non-Scottish characters, I find it out-of-character enough to be jarring, rather than engaging. I think you can do enough with Scottish-English to make his voice distinct in his general conversations with non-Scottish people. For me, it is seeing Scottisms, and Scottish-English grammer and vocabularly present in his dialogue that makes me feel strongly engaged with him as a character.
This said, I would understand why someone would chose to write MacTavish interacting with other Scottish characters in Scots, because I think you can make valid points about code-switching, and use it to obscure meaning from non-Scots speaking characters around them.
I would also understand if you wanted to write a story in Scots, told from either Scottish character’s point of view, for cultural reasons.
That’s a very good point. While I was writing his dialogue, although I wanted to do it, it did feel weird and a bit out of character. I’ve been heavily contemplating toning it down and using Scottisms and Scottish-English grammar like you said. Maybe if he’s under a lot of pressure + a shocking event happens, it could throw him off enough to fall into Scots for a couple of lines or if I write a diary entry by him I could write it in Scots. Do you think that could work?
The story is in third person so I feel writing it in Scots wouldn’t make much sense, but writing in a Scots perspective is something I’m definitely going to keep in mind for the future.

Certainly people who suppress their native accents and languages do that, and I think if you want to interpret MacTavish as someone who would fluently speak Scots otherwise, but communicates in English to non-Scots speakers that sounds reasonable to me.
He could very well write a diary in Scots; although there was a diary produced as additional material for the game, and it’s not written in Scots. Again, I’m not intending to criticise revision of canon to allow you to interpret his character in your own way, but I think that you might need to make it clear that you are reinterpreting that material for those people who are really keen on it so they know what to expect.
Personally, I think it’s an interesting thing to explore, because I think very few children in Scotland are taught to write in Scots, and Scottish literature written in Scots forms a minor part of the Scottish curriculum. So to me, this would be an affectation, a deliberate choice that says something about the character’s relationship to Scotland, his sense of nationalism and national identity, which adds to the sense of his character, as you write him.
Thank you so much, I really do hate the fact that so much about Scotland, its history, culture and languages have been stripped from the educational system and in Scotland itself, Scots is seen as a language for the uneducated. I really do want to flesh out Soap's character in this way and I will definitely make sure to preface that if I do use the device of a diary entry to explore him and his relationship to Scots more.
I do live in Sweden and have very patriotic Scottish parents so I think it was a bit of an oversight for me to just think automatically that every Scottish character I see would speak Scots instead of being pragmatic about it.
